Beringer foreslog et lettere alternativ til de ellers meget tunge måltider efter kirkegang.

Han introducerede også alkoholiske drikke til måltidet, og som følge deraf opstod drinksene 'Bloody Mary og Mimosa'.

Dette var et spark i skridtet på den klerikale magtelite, der indtil brunchens fremkomst kulturelt og politisk havde godt styr på samfundet. Brunchen brød magtmonopolet ned, et kulinarisk oprør, der startede en kraftig sekularisering af 'Guds eget Land'

Brunchen blev ekstra populært i 1930'erne, da Hollywoodstjerner tog toget tværs over USA og et mellemstop i Chicago lidt op ad dagen bød de sultne stjernevomme at tanke op.
