Ginger bread is super easy to make and is really delicious with vanilla ice cream or whipped cream.
Ingredients:
- 1 3/4 cups unbleached all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1/2 cup dark brown sugar (I've used light brown sugar before and the recipe has been fine), packed.
- 1/2 teaspoon apple cider vinegar
- 1 teaspoon pure vanilla extract
- 1/3 cup canola oil
- 2/3 cup cold water
- 1/2 cup unsulfured molasses.
You also need:
- 1 large bowl
- A wooden mixing spoon
- probably a spatula
- Measuring cups and spoons.
- a 9x9 inch pan

1. Preheat the oven to 350 degrees Fahrenheit. Grease the pan and/or put a layer of parchment paper at the bottom.
2. Stir together the flour, baking soda, salt, ginger, cinnamon, allspice, and sugar. Poke 3 medium holes in the ingredients with the handle of the wooden spoon. Spoon the vinegar into one hole and the vanilla into another hole. Pour the oil into the last hole. It's okay if it overflows. Pour the cold water over the top of the ingredients and stir well. Add the molasses and stir until smooth.
3. Place the pan in the oven and bake for about 30 minutes or until a tooth pick inserted into the center comes out clean (without any crumbs on it).

This is a slightly edited version of the recipe Serious Stuff Gingerbread from Bakewise, by Shirley O. Corriher.

Note: you do need an ice cream maker to make this.
Ingredients:
- 1 1/2 cups whole milk
- 1 cup granulated sugar
- a pinch of salt
- 2 1/2 cups heavy cream
- 1/2 to 2 tablespoons pure vanilla extract ( you can even add a little more if you really like vanilla)
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1/2 teaspoon nutmeg

1. In a medium bowl whisk together the milk, sugar and salt until the sugar is dissolved. Stir in the heavy cream and vanilla. Stir in the cinnamon, allspice and nutmeg. Make sure to taste the mixture, you can add more of any of the spices or another spice if you like.
2. Cover the mixture and refrigerate for at least 2 hours (you can do it overnight too).
3. Before pouring it in to your ice cream maker whisk the mixture together again. Then put into your ice cream maker for 40 minutes or until the ice cream is the consistency that you want. Put in the freezer for 15 minutes before serving.
