I really appreciate how much we learn to respect people's preferences in these modules. If the characters in our lessons are not interested in intense exercise, even if it would be beneficial for their health to try some, we're told to instead nudge them towards activities they are more likely to enjoy. So, I think it's important to do this when it comes to diet, also. If someone doesn't want to eat meat or dairy, it's not our job to tell them all the reasons they should but to say, "Okay! Given that's your preference, what can I suggest within those preferences to help you feel better?"

Everything we've learned at Bauman to date has led me to the conclusion that eating animal products is the best way to ensure optimal nutrition. I'm also totally onboard with reasons why people choose to eat a plant-based diet. For me, environmental concerns top the list. However, I think it's really important that people who choose plant-based diets educate themselves on the risks and strategies to try to mitigate them. I see a lot of people , especially young people, go vegan in order to lose weight, because they think it's better for their health, or because it's socially trendy, without understanding the impact on the body.

The Eating for Health diet, or as Dr Ede calls hers: the Pre-agricultural whole foods diet, seems to make the most sense to me. We have been conditioned to jump onto different diet trains that focus on elimination, and it gets really confusing really quickly, but what has been most illuminating to me throughout the course has been the strategy of seeking out foods, macro and micro nutrients rather than avoiding foods. That is a positive, and more intellectually engaging approach. It also gives you a framework for making good food choices in whatever scenario you find yourself. It does seem like the food revolution Dr Ede calls for in the video is monumentally challenging on a large scale. So I choose to focus on myself, my family, and soon, my practice with clients.

What I love about Bauman's approach in their Eating for Health philosophy is that no whole food group is left out. I do believe that we are programmed to think we need far more animal protein than we actually do. It is this reason why the demand is so hard to keep up with and has had such a harmful environmental effect on our world. I agree with Dr. Ede on the Pre-agricultural diet as a base that can be customized to each individual.

I am continually reminded that evolutionarily our bodies are predisposed to eating a certain way. Even eating with the seasons gives us the nutrients we need when we need them. When I decide what to eat I often think about what my hunter/gatherer ancestors would have had access to and try to keep it as simple as possible both in terms of content and preparation. If you eat whole foods and prepare them in a way that makes sense for your body you will do yourself a world of good. Everything in moderation, in this case "everything" excluding refined carbohydrates and sugars :)

I think a whole foods organic diet, with seasonal local foods, is very clearly the healthiest, the closest nature. Eating animals that are treated respectfully, fed what they are meant to eat, and that live in pastures with plenty of space, raised by people who care about the land as well, is ideal. Also, eating a variety of foods is important. It makes sense to work with people on an individual basis to see what works best for them.

I am not opposed to eating meat. From studies, our ancestors were scavengers. They would eat meat when they found it and they ate primarily a vegetarian diet of pre-agricultural nature. I think that being mindful about our food, where it was grown or raised and how is very important. Sprouting and fermenting nuts and seeds, eating locally sourced organic fruits and vegetables, eating meats that are sustainably raised and treated humanely on the food nature intended them to eat is the best way to health.

I believe that one of the hardest notions to come to terms with especially in a society where most people do not plant and harvest or raise and slaughter their own food is that something always dies in order for others to live. It is not often considered or spoken about but wheat, soy and corn fields which are massed produced in our country and are used in a lot of "healthy" plant based foods kill thousands of bugs, rodent and smaller mammals. Those mass produced crops have also caused pollution and thrown off whole ecosystems. I believe it is important to do the best we can to support and buy humanely raised meat, to eat seasonally and local and buying things with less packaging.

Fortunately, they are reasonable and not hard to find where I live, but I know this is not the case everywhere...I like Dr. Ede's final point about starting a revolution.

Considering the facts that we have learned in this course and in this lecture, it makes sense why choosing to eat animal products is so valuable for our health. Although eating animal products is not the only important aspect to address when it comes to diet, it is a significant one because of how a lack of animal products can cause imbalances in the body. With the popularity of vegan and vegetarian diets, this information can feel very confusing for some people. We cannot ignore the valid reasons that people have in choosing to avoid animal products. When it comes to caring for animals and the environment, an important perspective to consider is that there are ways to respect our world as we choose animal products, such as choosing humane meats rather than factory farmed animal meats.

Last year I reintroduced chicken after nearly 8 years without, and the year before I reintroduced fish and eggs after being fully vegan for about 3 years, leading up to the onset my illness. I have no doubt in my mind that my vegan diet played a roll in the destruction of my gut health, and it is animal foods that will repair the damage done. Ultimately every body is different, but at this point I do not believe a plant-based diet is natural or healthy, nor is it actually any more environmentally friendly, and the ecosystems that are destroyed by the mono-cropping required to support the diet renders it harmful to animals, just more passively than killing them directly for food. That being said, factory farming is equally unnatural and has got to be stopped.

I do think that I could never live without meat and that it does have some great benefits when eaten organically and pastured raised. With both of my children I was adamant about taking a supplement with DHA even though my OBGYN said it was not necessary. It was nice to see the difference in the diets and the minerals and vitamins. I will continue to eat a health animal and plant based diet.

I believe that many people choose a vegan lifestyle for reasons such as helping the planet, and animal welfare. While these are admirable reasons, animals actually play a huge part in helping the climate and the planet, if raised appropriately. Regenerative farming uses animals in the way they were meant to graze the land, happy and healthy; not eating corn, soy, and animal by products. It is not the animal causing climate problems, it is how animals are being raised. Animals also provide us with so many nutrients that we are not capable of getting through plants alone, which is why I believe there are so many health concerns among vegan and vegetarian communities.

So i agree with basically everything that she said about the american diet and how terrible it is. Also about being vegan most people that are vegan do it for the animals and that is understandable but I think that if we had a better way to humanely slaughter animals then food would be much better. Speaking on term of energy we eat that animals stress. Which could then cause mental and emotional issues for us humans. I wholeheartedly believe in eating organic foods as much as possible but also if someone were to slip on up on their diet they need not get discouraged because life happens. Rather they should incorporate more plants or whatever they choose in smaller amounts. As well as getting adequate exercise.

I do believe that bioindividuality is key and eating in a balanced way that truly supports your body, mind and spirit it paramount. For me, I see a lot of truth to what Dr. Ede was talking about based on my own experiences making dietary changes. I grew up vegetarian and while I did eat some eggs & dairy products, I ate a lot of grains, beans and processed soy products and my family did not always prioritize organic. As I got older I started paying attention to on-going gut issues, as well as symptoms of low-grade depression & anxiety. I began incorporating fish and chicken into my diet and I feel SO much better. While I haven't gone to a completely "pre-agricultural" that Dr. Ede talks about, just adding some of these things to my diet and cutting back how much I rely on grains and beans in my meals has helped me a ton. I had to reconcile what I was taught growing up about plant-based foods being morally superior and think critically about how I was sourcing my food, regardless of plant vs. animal - prioritizing local, small scale, organic, etc whenever possible.

I think it's fascinating that our bodies were designed to need nourishment, and specific nourishment, for each function of the body. Eating whole foods to help with overall body health makes sense. For me, the turn in my own eating habits has been to eliminate processed foods, and to learn to think holistically. I have struggled with gut issues my whole life, and symptoms began to surface when I was a teenager. I'm now 40, and have tried being a vegetarian for 5 years, taking away gluten and dairy, getting off caffeine, with only minor benefits. Recently I found out that I have SIBO and Candida. Treating these issues, going through an elimination diet, and re-establishing the way we eat in our home to a whole food diet, I am beginning to find the relief I have needed for as long as I can remember. We incorporate meat as part of our diet, for both the benefit of protein and fats. But think there is something so humane for animals to live their lives as "God-intended", outdoors & munching on grass and bugs. Also, going back to farming and growing crops without the use of chemicals, makes the ground fertile and rich, and the plants flourish without being depleted. And when we consume eggs or meat from these animals, or eat the produce of the land, the benefits it gives our body -- well, just seems like the natural way.

I am also learning it doesn't have to be all or nothing when it comes to diet and health.

I burn A LOT of calories per day. 2500 on an average day with a light workout. I need to get the calories and good fats in otherwise I feel the brain fog and I begin to drag. I've tried vegetarianism which worked well for a while and veganism did not work at all. Not eating enough makes me very lethargic and melancholy as well. Including more fish and light meats like chicken and duck has been great for me. I'm energetic and clear headed. Eating large game slows me down, but I feel good. So I like to keep my beef and pork on the light side. I enjoy beef jerky after a workout and beef broth all year round, but especially in the cold months. As for pork, mostly bacon and carnitas. I do wish there were more available meats. I also wish they sold more parts of the animal when shopping for meat.

I tend to resonate with the way these lessons are sharing about optimal nutrition. I love embracing fats, encouraging ketogenics and optimal mitochondrial function, nourishing the membranes with inflammation balancing fats. The more primal diets speak to me, greens, wild mushrooms, and plenty of vegetables with bones and organ meats. I think just as she suggested, fish is key in receiving adequate amounts of omega 3s, especially DHA. I've enjoyed experimenting with soaking sprouting and fermenting to increase bioavailability of legumes grains and seeds. I noticed nuts in her picture of the primal diet and although I heavily rely on them, I wonder about their antinutrients as well. Its interesting how sometimes a certain diet will be appropriate for a time and then our bodies will ask for change. I think there's a place for plant based, such as a time of spiritual cleanse, and then the body can shift its nutritional needs.

It was a difficult transition for me to eat animals again, but one that I felt was necessary after learning more about nutrition. If carnivores reduced their meat intake and were more thoughtful about its origins, I think we'd be in a much better situation.

I wholly believe in bioindividuality and have learned that I need to eat animal protein to feel and operate at my best. I have also learned that the type and amount of animal meats I consume have a big impact. I was vegetarian for ten years and then got involved in sustainability from a chefs/restaurants perspective as well as the periphery of nutrition. Choosing pastured and grass-fed local meats is expensive but I have found that I only need to take in small amounts to see and feel the benefits. I feel very fortunate to be able to access good healthy animal choices.

I was a vegetarian for over 4 years, a year and a half of that time I was mostly vegan/plant based. I spent a lot of time in the kitchen preparing real food and I felt great, but not as great as I could. For a long time, I had this goal to get back to a mostly vegan diet, but after starting this program and learning about the importance of the quality of the food we eat, I no longer have that goal. I think I felt great because I was eating more plant-based foods and eating less takeout because it was harder for me to find foods I could eat, but when I think back on it, I did still eat plant based processed foods, and probably a good amount of sugar. Now, my goal is to be more mindful of the quality of foods I am eating, and limit my intake of sugar, dairy, and gluten, as I have found I do not function as well when I eat these foods. I read labels more now, and really try to avoid packaged foods. I have a long way to go but I have already noticed a difference with just a few small changes.

I fear the push towards veganism and vegetarianism, I know many young people not eating meat and / or any animal products thinking this is the healthier choice for their bodies even though their labs show problems with nutrient deficiencies. Many women that I know who are trying to get pregnant or are pregnant are also cutting way back on consuming animal products for their impact on the planet and are instead relying on processed foods like protein powders to meet their macronutrient needs in pregnancy, which inevitable raises their risk of micronutrient deficiency. When I post about the risk of seed oils and the health benefits of meat, many friends respond defensively or angrily, there is just so much confusion about what is good for the planet and our health. I tend to believe that what is good for our health is also good for the planet and so I think its important to keep in mind the benefits to the soil that animal agriculture brings when it is done responsibly and regeneratively. I don't believe that a plant based diet is the answer to our health or planetary crisis.

However, when I was pregnant with my first son, I began eating and feeling ravenous for red meat after about a decade of never touching it and consuming a lot of tofu…it just felt instinctually correct. I still eat it today more than 24 years later, but I would probably replace it with more seafood if I had access to the high quality/affordability product more often. The idea of a vegetarian diet is an appealing ideal, but I don’t think an optimal reality for me. Indigenous cultures certainly consumed animal products and with no lack of respect for the interconnected web of life; even Ayurveda (not Hinduism) says to consume something from an animal every day.

One thing I love most about the Eating for Health philosophy is the idea of bio-individuality and paying close attention to your body's responses to foods, and your own personal needs. I have had my own journey learning to balance extremes in many areas of my life, and I very much appreciate Bauman's commitment to emphasizing balance and personal awareness. Teaching the importance of knowing our own bodies intimately empowers people to stand grounded in their life decisions. Learning all of the ins and outs of nutrition can be overwhelming, and it can be easy to become frustrated and feel like there's no "right" way to eat that is also enjoyable and convenient (or even possible for busy or underprivileged humans). So I love the concept of doing our best to emphasize veggie-full, colorful, organic-if-possible, intentionally prepared meals combined with mindful eating with smaller portions of higher quality animal products.

I found Dr. Ede's presentation on the poor diet (SAD) may contribute to one's Mental illness enlightening. Learning about the brain's building blocks in the brain helped me to connect the dots in understanding that what we eat has a direct impact on the brain functioning well or not. She also mentioned Nutritional Psychiatry is in its infancy stage. The Eating for Health diet includes small to moderate amounts of local, organic, pasture-raised, grass-fed, or wild animals and animal products that may support someone with mental illness. As a Nutrition Consultant we could be a part of a clients Health and wellness team.

Diet is an individual thing, however, I do feel that the Eating For Health is more aligned with my belief of eating a variety of quality food with balance. Dr Ede had some very valid points as far as eating meat and eating for brain health, foods high in DHA such as salmon. She really opened up my eyes as far as brain health and how foods do affect it. Eating for Health seems to be the way to go and something I will be educating my clients on. Also interesting about the anti-nutrients.

Eating a well balanced diet with everything we need to have a better quality of life I believe we will always get the best benefits if we eat the foods that our ancestors ate, carbs through veggies, water, fats, protein will keep us well.

I soon found out after 6 short months that. I personally couldn't be vegan I wasn't getting those 22 amino acids you get from an animal-based diet unless you're eating tofu or quinoa daily. I just couldn't keep up plus my stomach doesn't have the ability to break down oxalates. I was actually suffering from the large volumes of oxalates I was consuming on a daily basis, with little to no protein and calcium. My digestive issues got worse my joint pain got worse. It just wasn't good for me! I'm back eating lean meats and I feel much better,

It focuses on unprocessed whole foods as well as sustainably raised and caught animal foods, and allows for adaptation to fit an individuals unique dietary needs. It also advocates incorporating a variety of nutrients that the body needs to function optimally. I have been following something fairly close for about 6 years now. The biggest difference is that in addition to cutting out refined carbohydrates and about 99% of refined, added sugars, I also, generally, limit the amount of grains I consume on a daily basis, and I can say that I feel healthier today than I ever did in my 20s and 30s. Many of the chronic issues I was experiencing have been kept at bay.

Whatever environmental impact the food I eat has, I try to compensate for by making sure to reduce all waste, with particular focus on plastic waste and pollution.

Well I guess I can say I'm a little biased when it comes to including animal products in one's diet. I've tried being vegetarian a few times before in my life and only lasted a few months each time. Although my body loved it I feel like I lost too much weight and started to look "sick". I lost the weight really quick which was the good side to it but I didn't properly replace the animal products that I stopped eating with plant based alternatives. Now I call myself a "Sometime-atarian" which includes me eating solely vegetarian sometimes and others I'll bounce between chicken, turkey and seafood. I absolutely love learning about nutrition because since classes have started, I've replaced so many of the processed foods we ate with healthier alternatives. In the Eating for Health diet removing sugar is one of the suggestions and although I haven't completely removed it I no longer late-night snack on sweets. Now I'll go for some pickled beets or tamarind which will oddly satisfy my craving. Overall I find it amazing and can't wait to spread more knowledge to family and future clients on the importance of the Eating for Health diet.

I essentially learned much learned the opposite of what Dr. Ede was teaching. We learned to advocate for a plant based diet and that meat was in no way beneficial. That meat causes cancer etc. We did not learn about DHA and it's benefits and even how it is less bio available in plant-foods. In this course however, which is way more extensive even given that the last accolades was garnered from a prestigious Ivy league school, that Bauman college's stance is more realistic. Not everyone has access to a strict plant based diet and it may not benefit everyone equally. The importance is emphasized on balance. Plants do not connotate health, they can be damaging when inorganic and exposed to noxious gases, etc to even produce, and can also themselves be as nutrient defecient as plants. I have been primarily vegan, vegetarian and plant based my entire life but have seen the benefits of both sides and consider myself more omnivore although I do not consume in my home and am unsure if I will bring certain meats and cheeses in. Although could definitely start with wild caught, grass fed, pasture raised when I do!

I think most people would choose an eating for health diet or other diet like the Mediterranean diet if it were convenient. People spend a lot of money on already prepared food so it isn't always about it costing more to buy quality. If health were more convenient, it is getting that way more and more, that more people would choose better food.

If you look at the teeth of an animal, you can see exactly what they are meant to eat biologically. One look in a human being's mouth shows that an omnivorous diet is what our bodies are meant to intake. We have canines and molars. Our brains need crucial vitamins and nutrients from both plants AND animals. I understand that most who become vegan and vegetarian, do so for the health and welfare of animals on our planet; however, I feel personally that it starves the brain of vital necessities found in animal products. We can eat meat and, also be humane towards animals. That takes action from us against big corporations that don't care about animal welfare. We need more regulations and stricter rules regarding how animals are farmed. Our diet is imperative to our health both mentally and physically, and we cannot deny our brains what they need to function properly.

Even animals that are views as being "herbivores" are not completely herbivores, they will take animal protein when they need it. It is important to consider where the animal product is sourced - pastured raised. Like all living things, when mistreated, they hold no benefit to itself and to the other natural systems that depend on it. Like mono cropped vegetables that grow in mistreated soil, the vegetable will be subpar for all that consume it.

I definatly believe we have come so far away from our natural senses of hunters and gatherers that we are starting to minimize our palates. There's a reason why we can ONLY get DHA from animals and not plants, because we need that for our frontal cortex, and nothing else but meat can supply those things.
