Reflection for Practical / Coursework Task + Photos

Were you able to manage time?
During the practical test, I overshot by more than ten minutes because the quiche had taken longer time to be fully cooked than expected. I think that I could have avoided this by being more efficient with the earlier steps prior to putting the quiche into the oven. This is because I had taken a relatively long time preparing the quiche before putting it into the oven, and I believe that this has caused the quiche to only finish cooking completely after the one hour mark.

Did you face difficulties? How did you overcome them?
A major difficulty I faced was with regard to the time, because at the later part of the practical test, I started to feel that I was in a rush for time - especially because my quiche was undercooked even at the time I had estimated it would finish cooking at. I attempted to overcome this problem by increasing the oven temperature from 180 degrees Celsius to 200+ degrees Celsius, so that the filling in the quiche would be cooked faster. However, this later led to another problem of having the top layer of the quiche having a burnt and blackish appearance.

How would you have done it differently?
A way I would have done this differently if I were to be given another opportunity, is to (1) increase the oven temperature slightly from the very beginning (2) spend less time with the chopping of the ingredients for the filling of the quiche. If I had done these, I could have potentially gotten it done slightly faster than the speed at which I had baked the quiche today.

How useful were the nutritional tools?
The nutritional tools were highly useful in allowing me to determine whether I should opt to include certain ingredients in my dish. Some ingredients are high in fibre, protein and more, which make it very desirable to include into my dish. However, for some other ingredients such as ham, that have high salt or fat content, I tried to stay away from using them due to their potential negative impacts on one's health.

How manageable were the manipulative skills for you?
The manipulative skill I had used to make the Spinach Quiche was the rubbing-in method, which is the process of rubbing in fat into flour with my finger tips. At first, it was very tiring and challenging to rub the cold butter in into the flour. After many more practices, it has become slightly more manageable and easy. However, I think that I still definitely do have much room for improvement as there are times when I notice that there are flour or butter on my palm, which should not be the case for the rubbing-in method.

How purposeful were the investigative activities in helping you to come up with your final creation?
The investigative activities allowed me to come up with a final creation based on experience. Based on my prior try-outs during F&D lessons, I was able to understand which areas I was better at; what are healthier alternatives, and etc. This has allowed me to be able to make a wise choice for my final creation for the practical test, based on the Design Matrix table that was provided.

Design Matrix:
https://docs.google.com/document/d/1T5exX-bc2M0LH3HohqiRVZLUAqKrU6KRg3mwsXqMvas/edit?usp=sharing

Link to the photos for practical test:
https://drive.google.com/drive/folders/1kWKYDpHR3zI8jehGcWzEueC-ZFrbnGS5?usp=sharing

Today, we made three types of eggs: scrambled, pan-fried and hard boiled.

The scrambled eggs were quite tasty to us, but because we had poured in too much oil into the frying pan, they looked quite oily and burnt.

The pan-fried eggs did not look very good, although it tasted quite good, because the oil on the frying pan was already very hot, the eggs cooked right away, so we could not spread the egg mix around the circumference of the frying pan so that it would become a circular omelette.

The hard boiled eggs were boiled for slightly more than ten minutes, but they were still quite soft, so when we were peeling the egg shell, the shell started to poke into the egg white, cutting the egg.

We also made milo. We added around four tablespoons of milo powder to around half a cup of hot water, and let it cool while we were cooking the eggs. The taste was just right, it was not too sweet but also not too diluted.

From today, I have learnt that we could work more efficiently as a group, and in the future, we should add ingredients in moderation; for example, adding too much oil would cause the food too oily or burnt.

This is because my partner and I have accidentally poured in half a cup of water instead of pouring in one and a half cups of water.

Links to Photos: https://drive.google.com/drive/folders/1uaW9bB6ZThDtWvG7X5ug7uyYYDoke4OS

Questions from slides:
(1) What are some top killer diseases in developing and developed countries today?

The top killer diseases across the world are coronary heart disease as well as cirrhosis.

(2) Why?
Coronary artery disease is caused by the buildup of plaque in the arteries. This is caused by an unhealthy diet that is high in fats and sodium (e.g. french fries or instant noodles) that are eaten across the world. These foods are usually fast-foods and it is perceived by many people, especially those from low income backgrounds, that they are cheaper and have a greater value for price - instead of foods with healthier ingredients like vegetables. While this is true, by eating these foods, one is causing his/her health to be in a bad state due to amount of fats accumulating in their bodies. Eventually, eating these foods often will have a severe long-term effect.

Cirrhosis is an advanced liver disease that is caused by the buildup of fats in the liver. While there are various inevitable factors that may cause this, one of the risk factors include being overweight or having an unhealthy diet in general. Being overweight can be caused by the consumption of foods that are calorie-dense and high in fats/sodium. Hence,

With respect to my goals, what was my proudest moment?
My proudest moment was when Yun Xin and I were able to compose a song eventually. This took a significant duration of time and we needed to make use of time outside Music lesson time. Hence, when we could compose a music eventually, we felt very accomplished.
With respect to my goals, what was my greatest challenge?
I do not have a very strong musical background as I have stopped playing any instruments for nearly 4 years, hence losing the music sense and forgetting a lot of theory I had to learn in the past. As such, sometimes, when we had to think of what chords to use when composing the Garageband music, I faced a little bit of difficulty. However, with the help of my pair, Yun Xin, I was able to overcome this challenge as she had guided me extensively throughout this journey especially when it came to composing music.

(1) Do you think you have used contrast well in your work (colours, size, textural qualities)? Explain.
I think that I did not use contrast that well, as the technique of contrast is not too striking in my artwork.

For instance, the black background had a contrast to the beige colour of the skin. Owing to the black background, almost any colour used in the subject of the artwork stood out.

Additionally, for the texture, I have tried to add texture to the leafy portion of the tree by applying a "Dry Brush" technique, although it is not very noticeable. Personally, I think that this really added on to the texture and allowed the tree to look more realistic.

(2) Describe the way you had used materials in your work.
Personally, I did not use various art media when creating my artwork as I felt that using the more basic media would be easier for me. When using paint, I tried to make sure that it looks neat, and also tried to apply various different techniques to add texture to the paint.

(3) Do you think you have convey the message of your work well?
Although I am not too sure about what others would think about the potential message of the artwork, I think that I have tried my best in conveying the message that the building of infrastructure and buildings by humans are causing the population of trees to be reduced drastically. I did so by placing a plate of trees in front of a person, and depicting the person with buildings as his teeth about to eat the plate of trees.

(4) Is there any part of your work that you think you had done well? Explain.
I am not very sure about this as I do not think I am very proficient in the study of art. However, I think that one thing I had done quite well is the use of various colours in the artwork. The use of many different colours adds on to the vibrancy of the entire artwork, and makes the subject more eye-catching to the viewers.

I think this was because we delegated our work clearly before starting the practical.
- However there were a few confusions (e.g. I put in the mushrooms before putting in the chicken into the frying pan. I mixed up the order because I was rushing myself. I should think for a while before doing something so that I would not compromise the overall quality of the end product.)

Reflect on the Food Blogging Process
- The nutritional tools to which I referred to was a good guide to know how to make a dish healthier.

For this lesson, we made Shephard's Pie. It was made of ingredients of high protein (chicken), as well as vegetables to make the dish high in fibre. Moreover, the potato was the source of carbohydrates in the dish.

While making the dish, there were slight mistakes.

(1) When boiling the potato in water, the water started to boil and overflow, so I thought that the potato was ready. However, it was actually not ready. In the future, I should check whether the potato is done or not by using a fork to poke through the potato. If it crumbles or breaks, it is near done or done already.

(2) Frying the chicken. Although it was a "simple" thing that we have practiced in our previous practical sessions, I still found some difficulty when frying the chicken as it was slightly difficult to discern whether the chicken has finished cooking or not. I found this especially important since for meats such as chicken, it is highly important to ensure that the person who eats it would not get food poisoning. I think that this can be improved on by continuously practicing this as I am facing this difficulty due to the fact that I do not cook often.

The pictures for today are in this link:
https://drive.google.com/drive/folders/1UhOqf8p-c0lXmmLepNk-FMr2Kyd9j7J7?usp=sharing
