Studies have shown that in when American tourists travel to foreign nations, they tend to raise the value of national or local dishes.

Tourists are more likely to take a large interest in local cuisine, such as in Cuenca, Ecuador, and pay more for local dishes.

Americans who visit cities such as Cuenca are a major factor of higher expenditure in the city just for food alone.

Tourists express more loyalty to local restaurants and show a greater appreciation for the quality of the food. Though this helps business owners selling the products and restaurants alike, it raises the prices of food for the majority of people in the area who are primarily coming from lower income backgrounds.

As the worldwide food markets latch onto new foods, locals in the Andes begin to suffer from economic change. Quinoa prices have risen throughout the international food market because of its healthy benefits. Quinoa is primarily found in Peru, Ecuador, and Colombia. As more quinoa is being exported from these Andean regions, people are finding that their typical source of nutrition is becoming more expense.

80s' Economic Liberalization

Peasants watched as their markets eroded throughout the 80s as many Latin economies chose to liberalize their economies and further import products.

As a result, peasant produced crops (barley, onions, potatoes, etc.) fell into a heavy decline. The success of the international markets and imports forced them to migrate to the cities and suburbs throughout the early 1990s. Countries such as Bolivia, Argentina, and Peru needed to feed their rapidly growing cities and since the decline of the local farms, they relied heavily on imports. As a result, families were introduced to more of white flour and corn products. These products, as well as pasta and white bread, became staples of Andean diets due to their high carbohydrate count and cheap prices.
