Soil takes a long time to create/replenish itself.
Nitrogen - average nutrient range of less than 25 - 50 ppm, assisting photosynthesis and protein movement little. Phosphorus - average nutrients range higher than 25 - 50 ppm, which is a little lower than ideal, resulting in decrease reproduction and root growth rates. Potassium - average nutrient range of higher than 40 - 80 ppm, decreasing water movement and carb transportation capability.
If there wasn't enough of each nutrient the plants would struggle to maintain a healthy state of being affecting the whole environment. Lack of nitrogen - Problems with photosynthesis and protein. Phosphorus - Problems with reproduction and root growth. Potassium - Problems with carbs and water movement.
You can replace it by composting and with manure, legumes, crop rotation, and fertilizers.

Due to lack of transportation infrastructure, lots of food waste, and much food being transported from LEDCs to MEDCs.
Climate - certain plants are suitable for only certain temperatures. Cultural/religious - certain cultures don't eat certain foods, like pork. Political - Politicians may pass legislation making certain crops easier or harder to grow. Socioeconomic - institutional racism making health food harder to get and supply and demand effecting what is grown/produced.
Maximizing Yield - will increase the amount of food available for consumption. Reduce Food Waste - less food being thrown out and instead composted or sent to those in need (MEDC->LEDC). Changes In Consumer Attitude - People making an effort to buy only what they'll use. Monitoring/Control - Ensuring policies and actions taken on improving food accessibility are run smoothly/effectively.
