         <description><![CDATA[<div>the Andean dish pachamanca includes heavily spiced meat and vegetables buried amidst hot stones. <br>and is an old tradition of Andes.<br>pachamanca means "earth pot" in the Andes, they will cook this dish underground with hot stones. They will use the meat of lamb goat pork chicken even the alpaca and guinea pig, and with vegetable, they will use potatoes, lima beans, yucca, corn, tamales. <br>they will prepare the Pachamanca, first, they will dig a hole. Second heating the stone volcanic stones(only this stone can stand the intense fire without breaking)Third, they will put the potato under then the vegetable and the meat, after that put the stone on top and the grass then solid, and wait several hours. <br>This dish has a long history, it even has pre-dated written records, but we don't know the exact time.
