         <title>Week 3: Does the order of the recipe change the outcome?</title>

         <description><![CDATA[<div>-&nbsp; Generally you mix wet and then slowly add dry ingredients.<br>- Usually the order wont chnage too much about the final outcome.<br>- If you add too much dry before wet ingredients there can be gluten buildup which makes them chewy.<br>-Fats and sugars are always part of wet ingredients which are commonly put in dry.&nbsp;<br>- It can cook unevenly if you really mix up the order.<br><br><br></div>]]></description>

         <description><![CDATA[<div>-&nbsp; Flour gives the cookie batter structure.<br>-Cookie dough = 3 parts flour, 2 parts fat, 1 part sugar<br>- More flour will be less chewy and less flour ill be softer flatter cookie.<br>-&nbsp; Flour reacts with the wet ingredients to bring it into a dough.<br>- If you double the flour they will become very dry and lose all moisture.<br>- Your cookies will most likely fall apart and wont taste good.</div>]]></description>

         <description><![CDATA[<div>- Baking powder inflates cookies with carbon dioxide to made them lest dense.<br>- It uses two different chemicals sodium bicarbonate, tartaric acid.<br>- If you forget to add baking powder the cokie wont rise and will be dense and chewy<br>-The reaction happens when the powder gets moistened because of the wet ingredients.&nbsp;<br>- If you add too much it wont bake off and will leave bad taste.<br>-- Cookies and baking powder need a acid ingredient.</div>]]></description>

         <description><![CDATA[<div>- 1/4 cup of unsweetened applesauce = 1 Egg<br>-Eggs provide a good texture in cookie batter and with apple sauce the texture will become much chewier.<br>- Apple sauce can also be a healthy replacement for oil as well<br>-If you add sweetened applesauce you need to add less sugar.<br>- If you use applesauce you have to make the amounts of sugar smaller in the rest of the recipe.</div>]]></description>

         <description><![CDATA[<div>- Flour is 70% starch which is a carbohydrate that attacks enzymes in the batter.<br>- The texture of the cookie all dependson the amount of flour.<br>- Flour is used as a thickening agent to help bring together all ingredients.<br>- It is able to hold all ingredients together because of a protein called gluten.<br>-&nbsp; Most recepies for cookies call for all purpose flour because of its light airy texture.&nbsp;<br>- There is also another flour called cake flour which is commonly used in baking because of its sugar and low protein.</div>]]></description>
