Featured as a citywide leader by Forkit, Foursquare, and NewsCastic, Carbon Live Fire Mexican Grill has also received accolades in print and on television. It recently received feature mention on the Travel Channel's popular program Food Paradise, which in January 2017 included Carbon on an episode entitled Best Mex.

Around the same time, prominent newspaper the Chicago Tribune named Carbon's steak burrito as one of the city's 20 best. The publication has also honored Carbon itself as one of the highlights of the 2013 Taste of Chicago festival. The restaurant previously earned the title of Best Buy by Phil Vettel at the 2012 festival.

Carbon also has received numerous commendations from users on Yelp, TripAdvisor, and other consumer review sites. Diners have praised the quality as well as the creativity of the food, which reflects the innovation inherent in such recipes as the award-winning Mother Clucker burrito and the Signature Taco with premium fire-grilled steak.

Carbon is committed to using fresh ingredients and welcomes diners to try its cuisine either in-house or through takeout ordering. Online ordering is available, and two catering programs serve the needs of multiple budgets. Catering customers can choose from the classic option, which features some of the restaurant's signature dishes, and the more varied Best of the Best spread.

Carbon Live Fire Mexican Grill is a well-established Chicago destination with locations in the West Town and Bridgeport neighborhoods. As featured on the television show Food Paradise, Carbon Live Fire Mexican Grill is known for its tender steak and its cuisine's healthy ingredients that include fresh black beans and brown rice, with all items grilled in olive oil.

Unlike refried beans, which are created using bacon fat, black beans are one of the healthiest staples available. With an indigestible fraction that exceeds that of both lentils and chickpeas, black beans are essential in ensuring the health of the colon and digestive tract. In particular, they enable the colon’s bacteria to generate butyric acid, which is utilized by cells lining the colon to ensure its proper daily functioning.

Black beans are also an excellent phytonutrient source, with regular consumption linked to lower rates of cardiovascular disease and type 2 diabetes. For this reason, legumes such as black beans are recommended by organizations such as the American Cancer Society and the American Heart Association.

Four Health Benefits of Olive Oil

An acclaimed Mexican restaurant open since 2007, Chicago, Illinois-based Carbon Live Fire Mexican Grill operates with a focus of treating customers to delicious, healthy dishes using quality ingredients. Carbon Live Fire Mexican Grill's offerings include tortillas cooked only in olive oil, an olive-based vegetable oil regularly used in cooking for thousands of years. Olive oil possesses numerous health and culinary benefits, as outlined below:

1. Lowers risk of diseases. Olive oil contains numerous properties that improve the health of various organs and lowers the risk of diseases like heart disease, diabetes, cancer, and autoimmune disorders. Olive oil includes an abundance of antioxidants that reduce bad cholesterol, protect against cancer, and increases heart health.

2. Promotes weight loss. Studies demonstrate that the presence of mono-unsaturated fats in olive oil can help with weight loss by controlling the body’s level of insulin, a hormone that controls blood sugar and promotes weight gain.

3. Enhances skin health. Frequent exposure to free radicals, toxicity, ultraviolet light, and a poor diet can damage the skin and trigger the onset of skin cancers in extreme circumstances. However, healthy sources of fat like olive oil contain high levels of vitamin E and other antioxidants that hydrate skin, fight infection, and accelerate wound recovery.

4. Fights depression and mood disorders. Some studies link low-fat diets with higher rates of depression and anxiety, partially due to the brain not receiving enough mood-boosting hormones such as serotonin or dopamine. Olive oil and other healthy fats possess anti-inflammatory and hormone-balancing effects that fight depression and mood disorders.

Chemistry and the Grilling of Meat

Based in Chicago, Illlinois, Carbon Live Fire Mexican Grill offers burritos, tacos, and a variety of other Mexican dishes. Carbon Live Fire Mexican Grill includes premium fire-grilled steaks in its steak recipes, so as to promote health and flavor.

When a cook puts meat on the grill, the meat undergoes a number of chemical reactions that promote good flavors and preserve nutritional value. Fire-grilling helps to preserve naturally occurring riboflavin and thiamine, both essential B vitamins that help the body to extract energy from nutrients. Meanwhile, the grilling process encourages the drainage of fat, so that the final product contains less of this undesirable ingredient.

The grilling process prompts the Maillard reaction, a chemical process famous in culinary circles for its ability to brown meat and make it flavorful. The reaction consists of the interaction between amino acids and reducing sugar, which together cause the meat to brown and create a palate of different flavor compounds. As the meat continues to grill, these flavor compounds break down and form yet more combinations to entice the palate.
