         <description><![CDATA[<div>In&nbsp; first day after meet the human resource assistant manager, Miss Rita and she give a small orientation for the hotel staff environment. After fitting the uniform, I had been assigned to the Lobby Bar which is not only serving with alcohol drink but also serving coffee and drinks as well as high tea dessert.</div><ul><li>In this day, I am going to learn about body language for greeeting to guests</li><li>Trying to serve people the drinks, clean the table and also take the order from guests. When taking order from guests, it was quite difficult for me which I need to chat back to my senior collegue about the menu due to I had not understand yet all the dishes in menu that Lobby Bar provided.</li><li>It was grateful that I had been learned some serving knowledges in university, so that I can recognize the cutleries and differenciate the glasses. Such as the saucer, cocktail glass, white wine glasses, red wine glasses and etc.</li></ul>]]></description>

         <description><![CDATA[<div>Get the information that change department from Lobby Bar to The Dining Room which serve the international, Asian and local favourites on the a la carte menu. Lobby bar and The Dinning Room (TDR) was located on Level 1 in Sheraton Tower Singapore.</div><ul><li>Make the table setting on each table by using dinner knife, dinner fork and table spoon for both buffet time. It was different with I learn in basic serving about the dinning room setting up the cutleries.</li><li>Try to understand the 2 buffet section flow which is breakfast and lunch in TDR. The dinner buffet that TDR provided only available in Friday and Saturday.</li><li>Learning how to keep the drinks from Lobby Bar to TDR.</li><li>Learn cleaning and arrange procedure after buffet lunch such as prepare the buffet setting, washing coffee mashine and etc.</li></ul><div><br></div>]]></description>

         <description><![CDATA[<div>The job scope today is similiar with yesterday which is:</div><ul><li>Made table setting, clean the table as well as try to satisfy guests needs and wants.</li></ul><div>The manager was make some briefing information about the TDR operation flow. He had showed the function of the ordering system which is using to take order for the guests and make bill to the guests but the manager just share about how to order by clicking the screen which is all showed up the menu.</div><ul><li>There are some company group which have meeting at the ballroom will coming to take the lunch in TDR. So that manager show how TDR deal with the company by reservation such as a company was make a reservation for lunch buffet and will coming 24 pax guarantty and expected 28 pax. So means if the company was coming less than 24 pax TDR also charge the payment as 24 pax.</li><li>In addition, due to TDR provided coffee and tea only so that if the guests order for other drinks all will take in Lobby Bar. So that, every time we take the drinks from Lobby Bar must be recorded and every month will pay the cost for the Lobby Bar.</li><li>Due to not only provided buffet but also the a la carte so that I need to know all the menu items and better remember in my mind due to some of the guests lovely to asking recommend or some of the guests are allergy in seafood or lactose intorelant.</li></ul>]]></description>

         <description><![CDATA[<div>Basically, I am doing the same job scope:</div><ul><li>Made table setting, clean the table, satisfy needs and want from guests.</li></ul><div>So, TDR is non halal certified which TDR was used the washing point centerlized.<br>In addition, also learned the closing buffet set up flow such as how to clean up the buffet table.&nbsp;<br>Also, I am learning how to recognize the all section and table nomberdue to TDR got 5 section which is A until E. Then, I try to know the menu even TDR are provided buffet style but also had a la carte menu. For the coming days I need to try remember the menu and the ingredients or side dish of a food and beverages to had a good way to assists the guests.</div>]]></description>

         <description><![CDATA[<div>After these days the job scope I had been tried to adapt, and so far it is not very complicated. Certainly, that is only the very basic job scope.&nbsp;<br>Today, I had served two guests from west country which is very nicely, they asking my name and made a small chat with me such as ask my origin then one of the guest say he need to go Malaysia also. When they are leaving the dinning room, they said goodbye to me by calling my name, it was very warm heart. i think that is the wonderful being a waitress even my physical feeling exhaustion but a guests enjoy and happy in&nbsp; my service that's enough for me.</div><ul><li>In addition, I am trying to get the drinks from lobby bar to TDR such as soft drinks and red wine. I had to made record in a book once I get the drinks in lobby bar to TDR.</li><li>After closing lunch buffet, the manager made a month end briefing. Based on my understanding, the manager made the briefing for the next month promotion, festival, or something changes in TDR. For example, in April TDR will having Easter brunch, Henry's Lobster ( a brand that TDR had been provided to guests) will come out seasonal special, so that staff in TDR can recommed to the guests who are ordering a la carte as well as establish wine of the month.</li></ul><div>So, being a five star hotel dinning room I don't think is very easy one that we can learned in theory from school.</div>]]></description>

         <description><![CDATA[<div>Except doing the same job scope like before, I had trying too :</div><ul><li>Take the food from kitchen to lobby bar which the lobby guests had ordered.</li><li>So in TDR will provided the half lobster per pax for the customer having buffet in TDR but only 1 time serving only.</li></ul><div>The assistant manager was given the briefing for one by one about the coming promotion, and explaine about the discount for different credit card.&nbsp;</div><ul><li>Based on my understanding all staff need to remember these promotion and credit card discount.</li><li>I had been asked to remember price of the buffer not even breafast and lunch but also dinner.</li><li>Actually TDR also sell the cake not only slice but also whole cake.</li><li>Due to TDR had a la carte such as chinese cuisine which need to table setting by using&nbsp; chopstick and the spoon. So that, I had been teached how to table setting on this.</li><li>Before back, I had bring the dirty napkin to the laundry.</li></ul>]]></description>

         <description><![CDATA[<div>By doing the same job scope while learning the new thing which is:</div><ul><li>Try to learn hostess duty which is need to check the reservation for breafast buffet for the room guests which had included in the room package.</li><li>Firstly, greeting the guest with a smile then ask the guests room number then check the list which had been listed by front office that the guests room included breafast buffet.</li><li>Each room number will be higlight with blue and pink colour which showed for 1 pax or 2 pax accordingly.&nbsp;</li><li>So the hostess should makesure how many guests dine in if over the pax will chargeable and need to inform the guests.</li><li>There are some situation that there are the guests not be highlighted but they have included the breakfast buffet so that we need to go front office to check for it.</li><li>After closing breafast buffet need to calculate the total room and total cover as known as total pax so that can be key in to charge from front office.</li><li>Hostess need to in charge of cake counter, sometimes have guests order the whole cake so that we need to take the cake in pastry kitchen.</li></ul><div>After that, i had been learned the folding napkin for the TDR style, and learning all the a la carte menu for table setting and the condiment and also take the crackers for chinese&nbsp; dishes or bread for western food. In addition, bring the guests to the lobby bar which some of guests want have the coffee and tea with dessert or snacks.</div>]]></description>

         <description><![CDATA[<div>Begin with learning as a hostess by greeting to guests, make record to the guest in by room number which had included breakfast buffet.</div><div>Besides that, also learning:</div><ul><li>Key in the lunch reservation in laptop which the TDR using the record system.</li><li>Record reservation must key in with pax having lunch, reservation name, table no ( hostess should follow te pax to arrange the table for guests) and date and time dine in as well as the number handphone.</li><li>During the breakfast time, hostess need to prepare the food tag for lunch buffet which will change the menu everyday by the chef.&nbsp;</li><li>If the food tag are not in the list food tag we need to print out new one.</li><li>After lunch buffet, hostess will prepare the food tag for tomorrow breakfast buffet.</li><li>After closing buffet, TDR was conduct a food training as known as food tasting for the next month seasonal menu for the staff.&nbsp;</li><li>It was bacause every staff need to know the taste of the seasonal menu for easily explaine to the guests later. The chef will explaine what is the special in this new seasonal menu and what ingredient included with.</li></ul>]]></description>

         <description><![CDATA[<div>Today carry on for table setting, help guests to take the empty plate and clean the table due to lack of manpower today. If the hostess are not free to handle guests, I also help for asking the room number from guests to makesure they are purchase the free breakfast buffet.<br>Today learn the new skill which is how to make bill to the guests by using the cahier machine.&nbsp;</div><ul><li>Firsly, measure the table number are correct.</li><li>Measure the list of order are correct.</li><li>Then check the card which type are belong to such as master or visa.</li><li>After that check the total amount&nbsp; are correct and wave the card on the machine credit card.</li><li>Waiting for the receipt and see need for asking signture or not.</li><li>Finally, take the guests copy one and return back the card to guests and ask for sign in our receipt as a proof.</li></ul><div>In addition, I also try to close breakfast buffet first time by myself and set up the lunch buffet before the buffet begin as well as close lunch buffet.&nbsp;</div><ul><li>After doing these, I had wiped the plates that had been washed.</li><li>To wipe the cutleries, need to prepare the hot water than put the cutleries inside, after that take out and wipe. Measure the cutleries are not have any dirty in the surface.</li></ul><div><br></div>]]></description>

         <description><![CDATA[<div>As usual doing the same job scope:</div><ul><li>Made table setting, clean the table, satisfy needs and want from guests.</li></ul><div>After around 8am, my college bring me to the basement 3 which is our staff canteen to clear the toaster, container coffee and tea and etc. There are staff breakfast every morning and staff TDR will doing the clean job scope around 8am.<br>In addition, today are very challenges for me which is after breakfast buffet closing, I need to prepare the food tag for the lunch buffet.&nbsp;</div><ul><li>I think it was not easy do find the tag according the chef menu given. But the most difficult things is put the correct food tag in front of the dishes.</li><li>The lunch buffet was started on 12pm and I still got some food tag havent put yet. It was really make me dizzy at the moment. I think need some time to memorize the dishes name and look.</li></ul><div><br></div>]]></description>

         <description><![CDATA[<div>As usual doing the same job scope:</div><ul><li>Made table setting, clean the table, satisfy needs and want from guests.</li><li>I had go basement 3 clean the staff&nbsp; breakfast as yesterday my collegue taught me that by myself.</li><li>As a hostess to bring the guests in and help them find a table.</li><li>I had help for pick up the phone when the phone rang, then greet with guests, mention hotel name and the dinning room then inroduce my name to the guests as well as ask them what I can assists.</li><li>But I dont know all the promotion for the reservation, so that, i just helping for on hold the phone then ask manager or collegue to handle.</li><li>I had been teaching how to open the bill for the room guests which need to guests to sig in the bill then make payment when they check out from hotel.</li><li>My collegue also teach me for the walkin guests how to make the bill in the cashier system.</li><li>In addition, also I had been calculated the total room and total cover then pass to cashier.</li><li>Lastly, do the closing buffet as usual.</li></ul>]]></description>

         <description><![CDATA[<div>As usual doing the same job scope:</div><ul><li>Made table setting, clean the table, satisfy needs and want from guests.</li><li>Be a hostess to bring the guests in and help them find a table.&nbsp;</li><li>After closing buffet, made table setting for lunch buffet.</li></ul><div>In addiiton:</div><ul><li>During lunch buffet, there are some guests are having a la carte, I had try take order from the guests and try key in to the system.</li><li>In addition, i also take the drinks from lobby bar, after sending the lobby bar, make table setting to the guests based on their ordering and also send the condiment.</li><li>Then, after guests request for the bill, i try to print bill to the guests (accompanied by the manager) and see which kind payment they want such as by room checked, credit card, or cash.</li><li>Today, the guests are from the hotel guests so that they want to under room checked, so need the guests sign in the bill, then TDR will send to the front office, after that front office will charged the cost when the guests leaving.</li><li>Lastly, as usual I close the lunch buffet, and asking from manager to pack the whole cake from pastry kitchen which is the guests ordering the cake.</li><li>I also pick up the phone call and try to record the reservation from the guest by asking the date, time, how many person dine in, dinner buffer or a la carte, and under whose name and number handphone.</li></ul>]]></description>

         <description><![CDATA[<div>Be a hostess whole day while cleaning and setting table:</div><ul><li>Bring the guests in and help them find a table while offer their coffee or tea. I had count the total room and total covers.</li><li>While waiting for the guest coming, I was prepared the food tag for lunch buffet by confirmation from the chef.</li><li>After closing breakfast buffet, I was put the food tag on the correct way.</li><li>During the lunch bufet, I was pick up some call which the guests want to made reservation today, tomorrow, and next week.</li><li>After that, I will key in the reservation on laptop in the Excel file.</li><li>I was received a phone call that want t cancel the reservation, so I was check in the reservation platform which called 'chope' than I was cancel it.</li><li>So, there are guests are having a la carte, i also take the drinks from lobby bar and made the record.</li><li>The manager still show the way for payment by cash in the system.</li><li>I also do for the room charged which I need to close the bill for them by using the system.&nbsp;</li><li>Help to take the whole cake to pastry kitchen to do packing.</li><li>Manager also show me how to write the cake order list which need to write down the name, pick up date and time, order date, which cake, any wording on the cake, paid or not paid as well as need to take to pastry for the chef signing.</li><li>Lastly, as usual I close the lunch buffet.</li></ul><div><br></div>]]></description>

         <description><![CDATA[<div>Today, Sheraton Tower was arranged a food safety course (Level 1) for me to attend. As a trainee in food and beverage industry must passed the&nbsp; food safety course to ensure all action in restaurant can be more hygience and safety to the guest. Thi course objective is to equip me eith knowledges and skills to prepare safe and hygience food.<br>In this course I had learned about:</div><ul><li>Practise good personal hygiene</li></ul><ol><li>Practise performed by a food handler to ensure cleanliness during food preparation with wash hand (the 8 step proper way), wear clean attire, keep hair tidy, keep fingernail short and cover open cuts anf lesions on hand.</li></ol><ul><li>Use safe ingredients</li></ul><ol><li>Check ingredients before use to ensure ingredients are safe for use by check the store at proper temperature, check ingredients are not spoilt or contaminated and check the expire date.</li><li>Clean ingredients thoroughly using clean water, scrub the peel and rinse the ingredients second time as well as measure the ingredients are far away potential sources of contamination.</li></ol><ul><li>Handle food safety</li></ul><ol><li>Method to defrost food by in chiller at between 0 degree celsius&nbsp; to 4 degree celsius, in microwave oven after use and in water (submerged).</li><li>Frozen food can not be defrosted at room temperature (30 degree celsius) because of germs grow quickly at the temperature danger zone (5 degree celsius to 60 degree celsius).</li></ol><ul><li>Store Food Safety</li></ul><ol><li>Container for storage of food must with food grade materials which can be use for microwave safe, cleans and in good condition as well as sealed properly.</li><li>FEFO and FIFO Stock Rotation System had been learned for reduce the risk of using expired or spoilt food ingredients.</li></ol><ul><li>Maintain Cleanliness of equipment and premises</li></ul><ol><li>Crockery, utensils and equipment was broken should not be use anymore.</li><li>Keep premises free from pets.</li></ol><ul><li>Workplace safety and health</li></ul><ol><li>Wear anti-slip shoes if floor is slippery.</li><li>Wear heat resistant protective gloves.</li><li>Wear cut resistant gloves.</li></ol><div><br></div>]]></description>

         <description><![CDATA[<div>Today being a cahier whole day which need to:</div><ul><li>Key in the chargeable buffet breakfast to the hot guests.</li><li>Key in the food and drinks for having a la carte breakfast guests.</li><li>After closing breakfast buffet, need to close morning session revenue before 11pm.</li><li>In the system, need to print out the the report revenue for breakfast session in summary and daily report for using calculate the revenue.</li><li>I need to collect all the resit that I had open to the guests, then calculate how many city guests and house guests.</li><li>After calculate, key in to the daily revenue on laptop.</li><li>That was room charge resit need to bring to front office for them which need to charged the guests before they checked out.</li><li>During preparation lunch buffet, I also made table setting and clean the table.</li><li>During lunch buffet, I aslo open the bill to the BEO group which having seminar in our ballroom.</li><li>I also made payment for the city guests by credit card.</li><li>But it was made a mistake that there are having discount for the banks credit card but I havent key in the discount for the guests. So that need to void the payment on the bank then open again the bill which having dicount.</li><li>Thus, I know that before made payment should know the guests what bank card they are holding.</li><li>During lunch buffet I also go lobby bar to take drinks to the TDR and record on the entry book.</li><li>I also serve the dishes to the customer.</li><li>While lunch buffet closing, I calculate the revenue as breakfast before then key in on laptop.</li><li>Then, due to we had receive the cash so we need to send the cash to the finance which at level 3.</li><li>Lastly, I send the cash to the level 3 then made the record at the book.</li></ul>]]></description>

         <description><![CDATA[<div>Today start with the deep clean all buffet table, cabinet and coffee machine.</div><ul><li>All the cabinet that put the dinner plate, b&amp;b plate, site plate, soup bowl and etc that under the buffet table need to wipe clean.</li><li>Check the expired for the condiment which if expired need to change new one which asking from chef and then made the new labelling which write down the date.</li><li>There was a table reservation by special menu like fine dinning service, which starting with appertizer, soup, main course and dessert.</li><li>Always keep aware to take the empty plate then setting up for the main course which some having beef and fish or chicken.</li><li>After last order I was clean the coffee machine which switch on for the dinner.</li><li>Folded the napkin for prepare use tomorrow.</li></ul>]]></description>

         <description><![CDATA[<div>Starting with clean the buffet table and set up for breakfast buffet tomorrow:</div><ul><li>Clean to coffee machine, wipe all the buffet table and table which put the all plates and bowl under the buffet table</li><li>Key in the take out cake and made payment to the guests.</li><li>After 6pm do the closing cahier for snack section with same method.</li><li>Go lobby bar for helping to serve the food and drink and key in the order.</li><li>When dinner starting, welcome the guests and take order from them.</li><li>Serve the drinks which take from lobby bar and recorded at entry book and food to the guests.</li><li>Make payment to the guests.</li><li>Do the closing cashier by starting check the credit card machine and check all the credit card receipt are correct.</li><li>Then as usual to do the closing buffet before every section, after that need to go sales analysis to record the Henry Lobster Tracking today to check the menu order today.</li><li>Key in the revenue at laptop and also need to sum up all revenue and key in at Excel.</li><li>Then post the sales today at the WhatsApp group to inform every staff.</li><li>Go to FO to put the all sales and cash to the locker.</li><li>Lastly, print the food tag for the tomorrow additional counter breakfast buffet.</li></ul><div><br></div>]]></description>
