Ti Punch means "small punch," it is a rum drink that is especially popular in Guadeloupe. "Ti " is a creole word for small or little.

Punch - is a rhum and fruit mix with added sugar and spices. It is served as an apéritif before starting a meal, both as a matter of tradition and because the drink itself is strongly alcoholic.

A popular tradition is that “chacun prépare sa propre mort” (everyone prepares his own death). Instead of serving the mixed drink, the host puts out the ingredients, and everyone prepares the drink according to their own taste.

A tortilla is a spanish omelette made from eggs with potatoes and onions. It is called tortilla española or tortilla de patatas (potato tortilla) to distinguish it from tortilla francesa, which does not contain potatoes.

In the traditional preparation, potato slices and diced onions are first fried in plenty of olive oil. As soon as these are at least half cooked, eggs (beaten and salted) are added. Mix everything together and cook slowly in a pan until the eggs have set and the tortilla has a firm shape. The finished tortilla is then turned out like a cake.

Sauerkraut or sour cabbage is white cabbage or pointed cabbage preserved by lactic acid fermentation. It is usually eaten steamed as a side dish. It is internationally regarded as one of the best-known German dishes.

Sauerkraut is stewed with a little water or stock and fat. In addition to salt and pepper, the usual spices are bay leaf, juniper, caraway, cloves or marjoram. Depending on the region, ingredients such as onions, apples or grapes are also added. In Hessen, for example, this is apple juice and in Thuringia beer.

I'm making a special type of sandwiches that we traditionally eat on February 24, which is our Independence Day. This year I'll be spending that day on Guadeloupe. The sandwich has 4 components: dark rye bread, butter, Baltic herring (spicy and salty) and slices of hard-boiled eggs. The Baltic herring is a small fish caught in the Baltic Sea and in 2007 the Baltic herring was announced the national Fish of Estonia.
