What I do is find some kind of project that looks fun and do-able, see what part of a curriculum it fills, than try to make it with the kids. For example, we did paper airplanes and  while this is SUPER simple, it filled requirements in Science AND ADST.

"effects of different types of physical activity on the body"
What I would do is choose teams to work on a specific muscle group. They would research the muscles, explore current ways of working those muscles and research, design  and build a machine to exercise those muscles. ADST used as a way of supporting and reinforcing another curriculum!
