I have always thought it would be very cool to do something like this in the workplace of some of our graduates. That is see them genuinely applying their learning. It is not the only way to do this. Reflective journals of the participants would be good as well

The ability to capture more than words (per the human observation toolkit blog) - providing richer insights that can be probed further.

How do I capture those non-verbal observations (e.g. notes in transcripts, documenting my interpretations of body language etc)? How valid would my interpretations be, given I'm not a psychologist and am likely to be biased? Would I need to keep recordings if I'm using those non-verbal cues in my analysis?
