Cut the bread into little cubes and combine them with garlic, salt and oil in a bowl. Bake them for 10 to 12 minutes. When the croutons are golden, turn off the oven.

Make the dressing:
Cook an egg in a pot of boiling water for about 60 seconds. As soon as the egg is cooked, remove it from the water and let it cool off.
 
While the egg is cooling off, mix the sauce. Add lemon juice, garlic, salt, pepper and capers in a bowl. Crack the cooled egg and add it to these ingredients. Whisk until the dressing is smooth. Slowly add the oil in a steady stream while constantly whisking again until smooth.
 
Assemble the salad: 
 After the dressing is ready, tear the romaine lettuce into 1-2 inch pieces and add them to a large bowl. Add half the dressing while tossing the salad. Add the remaining dressing with Parmesan cheese, and croutons and toss again. 
 To serve:
 Chill the plates in the refrigerator before the salad is served.
