But, the same amount of people will still show up at that time, so it might not do anything at all unless they can shorten the turnover time.

Customers appreciate the convenience of having a reserved table, especially during busy periods. By reducing wait times Sophia's Bistro can provide a more enjoyable and stress-free dining experience. BUT, If the reservation system is not user-friendly or experiences technical issues, it could frustrate both customers and staff. Difficulty in managing reservations, double bookings, and negatively impact the dining experience.

If the reservation policy is indeed established, Sophia's Bistro might not want to allow reservations during the busy service hours from 12pm-2pm and 6pm-8pm. All reservations outside of those hours will be permitted in order to manage the volume of customers the restaurant is accommodating. Reservations can be made through Open Table or by phone with the hostess. 

Implementing a reservation policy will help a lot in managing the increase in customer demand. First by use of this they can maximize the seating time of each customers, second they can avoid line up by providing them dining time so they will arrived on that given time and lastly she can take advance orders by having a reservation policy.
