  • ½ cup (100g) sugar
  • 4 tablespoons golden syrup 
  • 1 ½ teaspoons baking soda (AKA bicarb of soda)
  • dark chocolate
  • saucepan
  • measuring cup
  • teaspoon
  • tablespoon
  • baking tray
  • baking paper
  • stove
  • timer

  • Line a baking tray with baking paper.
  • Place the pot on the heat with the sugar and golden syrup and let the mixture first melt, then turn to goo. Then turn up the heat to medium and let the it simmer until the color of maple syrup -THIS TAKES 3 MINUTES, SET A TIMER!!! 
  • Turn Off the heat, and get prepared with your whisk and spatula because the next step happens really fast. Whisk in the bicarbonate of soda fast , and watch the syrup turn into a cloud of aerated pale gold. Quickly stop whisking and use your spatula to pour this immediately onto the tray.
  • Leave it until set cold and then break/cut it up.
  •  Melt dark chocolate either in a bowl over boiling water or in the microwave. Dip the honeycomb in the chocolate so it is completely covered. Take out and let the leftover chocolate drip off. Place on a wire wrack to set.

  • When the sugar is on the stove it melts, turning from a solid into a liquid.
  • Once the sugar and golden syrup have melted together, the mixture starts to emit a nice smell.
  • When you put the Baking Soda into the sugar and golden syrup mixture, it froths up and rises rapidly, because the mixture released gas
  • After the mixture is poured onto the tray   it sets, turning from a liquid back into a solid.
  • When you melt the chocolate, it turns from a solid to a liquid  and when you let it set on the honeycomb it turns back into a solid.
