Popcorn changes in many ways. It begins as a seed and changes into a fluffy piece of goodness through the cooking process. Only popcorn can pop!. It differs from other corn in that its hull is just the right thickness to allow it to burst open. Each kernel has a small amount of water inside. As the kernel heats, the water expands and turns into steam. The pressure builds causing it to explode!

There are different rules in how to make popcorn. I've made popcorn only two ways, over the stove and in the microwave. When you cook it over the stove you need turn your stove on medium high, put oil in the bottom of the pan, put your popcorn kernels in, and then put a covering over them and wait for them to all pop. When you put it in the microwave you open up the popcorn package, put it in the microwave on the time it tells you and then wait for it to finish popping. So depending on how you cook your popcorn just depends on the way you cook it since there different rules of cook it.

Whether you are making popcorn in a microwave, over a stove top or over a fire, rules are needed in order to obtain the perfect pop of the corn.

Many theater owners refused to sell popcorn in their theaters because they felt it was too messy. Vendors set up popcorn poppers or rented storefront space next to theaters and sold popcorn to people on their way into the theater. Eventually, theater owners began installing popcorn poppers inside their theaters; those who refused to sell popcorn quickly went out of business.
https://www.popcorn.org/Facts-Fun/History-of-Popcorn/Recent-Popcorn-History

Popcorn started off as an accidental discovery- probably over an open fire. In the beginning, popcorn was very affordable and plain, with just salt and oil added. Now, you can make popcorn at home in your microwave. Over the years, popcorn has morphed into a gourmet food. The prices have risen, but also the variety of flavors and sizes have also changed quite a bit. Today, you can buy many unique flavors like confetti, jalapeno cheddar, and dill pickle - just to name a few. With the way popcorn has changed, my expectation is that popcorn will continue to become more expensive, more readily available to make at home, and expand into more flavors than we can imagine.

Historically, popcorn has been around since (at least) its Aztec inception in 1519 and is used for not only eating, but also for holiday decorations and cultural traditions. Scientifically, when a popcorn kernel is heated, the trapped water in the endosperm turns into steam, building up pressure inside the pericarp. This pressurized, super-heated steam transforms the soft starch in the endosperm into a gelatinous material.
