The Canadian flag leaf is the maple tree leaf or maple tree.
During the winter, with the intense cold, the trees produce a starch that lies inside the sap. At the end of winter, when the temperature rises and the trees begin to thaw, the farmers begin the process of extracting the sap.
Once extracted, the sap is boiled to the consistency of a thick syrup. Depending on the temperature at which it is heated, it turns a different product. For example, if heated to 104 degrees Celsius, turns syrup at 123.9 degrees Celsius, turns into granulated sugar.

Maple Syrup has variations, depending on the season and the region where the sap is extracted: the darker the color, the stronger the flavor.
