When students came to class, they would do an inquiry lab.  We would make Oobleck (cornstarch and water).  Students would have to experiment with it (touch it, try to pour it, place objects in it, stir it, etc.) and determine the properties of the substance.
They would have to decide if the substance was a solid, liquid, or gas, and justify their answer.
