I believe that throughout the scene, Hamlet never knows that he is getting watched. Through his conversation with Ophelia, he speaks directly to Ophelia, and never speaks about anybody else separately. For instance, when Hamlet says "You jig and amble, and you lisp, you nickname God’s creatures and make your wantonness your ignorance." he directly criticizes Ophelia for her ways.

I believe that throughout Act 3, Scene 1 that Hamlet is unaware that he is being watched. Due to the intensity at which he is flinging (unfounded) accusations and insults at Ophelia, and the fact that he's gone partially insane, it is unlikely he has full spacial awareness and can tell he's being watched.
