During the fourth take on his father's death William tells us that his father instead of dying he turns into a big catfish. As a reader I was very skeptical of this actually happening. I think what really happened is that he died and William lied to himself saying that he turned into a fish

When change occurs people cope with it in different ways. They way the story was written I felt that these stories were the product of William trying to cope with the change of his father's death

Here William accepts the fact that his dad is now gone in his own way. He believes that he turned into a fish and that he is still alive. The transformation from man to fish could represent man's transformation after death.
