Mélanger intimement la viande, 1 oignon haché, le persil et un peu de quatre-épices. Saler et poivrer.
Préparer le chou en ôtant les feuilles abîmées, raccourcir le trognon et l'inciser pour en retirer le maximum sans détacher les feuilles.
Le mettre dans une grande casserole remplie d'eau froide. Faire chauffer doucement jusqu'à ébullition, puis retirer le chou, le laisser égoutter et refroidir un peu.
Presser légèrement pour éliminer le restant d'eau, puis rabattre délicatement et une à une les feuilles vers l'extérieur en allant jusqu'au coeur.
Retirer le coeur du chou, le hacher et l'incorporer à la farce.
Remplacer le coeur par la farce. Rabattre quelques feuilles, et répartir le reste de farce entre les feuilles, en reconstituant le chou au fur et à mesure pour lui redonner sa forme.
Disposer 2 ficelles de cuisine en croix, déposer dessus une barde de lard. Poser le chou, le recouvrir avec la barde, puis avec la deuxième.
Ficeler le chou en relevant les ficelles.
Dans une cocotte beurrée, faire un lit avec 1 oignon et la carotte émincés. Poser le chou dessus, mouiller avec le bouillon.
Porter le tout à ébullition puis laisser cuire à feu très doux, 2h à 2h30 en surveillant pour que ça n'attache pas.
