         <title>Brought Respect to the Profession</title>

         <description><![CDATA[<div>I think Escoffier made so many amazing contributions. However, my favorite is that he brought respect to the profession of being a chef. I think he did this in a few ways. First, he elevated the cooking style by changing the restaurant experience into something special. Second, he established himself as a professional and started cooking for royalty on top of having his own restaurants, giving the profession a good name. However, I think the most significant way he did this was by respecting his own employees. He eliminated the culture of brutality and profanity in his kitchen and gave his workers insurance and protection. The respect for the profession he created started from the inside of his establishments, before he was famous. </div>]]></description>
