Student-led inquiry can absolutely be done with supported students. To be able to learn about something they are truly interested would spark and motivate them just like any other child.
There will be times when you directly teach subject specific knowledge and skills in order to support their cognitive processing. 
As teachers, we scaffold connected opportunities to develop their skills, and we value our students as capable inquirers. We can model and support thinking and thinking about thinking and generate routines to help their understandings.
