My concern with technology is that I will disinterest some students while trying to interest others. I worry that by incorporating technology some students will "check out". How does one include technology without making it hard for the students who are not fans of technology.

One way to check the best way students learn (depending on their grade level of course) would be to include a google form as an anonymous survey that they could answer a few questions regarding their learning preferences. Once general data is gathered on how your students learn various teaching methods could be used along with technology to teach the entire class as best as you can.

I feel like the question of, why do I have to do this, I will never use this, will come to play often.

We are sadly in a world today where it is going to be hard with out using technology. There are going to be a few students who don't like technology but that is where a survey on the first day of class will help you get to know your students and they will be able to tell you they don't like technology and you can specializes some assignments to accommodate that.
