There are many reasons why these is like this, for example the latitude of the equators-most of the countries have colder climate because they are to high on latitude of the equator-, the oceans and seas, the mountains or forest. Climate is one of the reason why Europe has a lot of tourist. Some curios fun fact is that in Europe you can find some countries that have midler climate-warm summers and cool winters-, but in others countries like Northern Scandinavian, depends of the time of the year, in winter for example, the sun doesn't appear almost because how it is near the arctic circle, depending in the position of the sun, you can have days were the sun appears or not. There is not why of why does humans do this, but we do have a solution, we have to stop damaging the environment and do something about this. A fun fact is that Europe is one of the most continents that have this serious problem with pollution and deforestation and acid rain also helps with the problem of deforestation because it damage trees.
As you can now, people is quite interest in Venice because of their canoes trip in the canals, well actually does canals are the ones that make possible to you to transport to a way to another, since Venice is conformed by many little islands. 
Also, in some parts of Europe, like Netherlands, some people reclaimed land from the sea as they need more land to grow  population. They use water from dikes to polder.
