         <description><![CDATA[<div><strong>Preservation by fermentation</strong><br>1. The differences between pickling vs fermentation</div><ul><li><sup>Pickling method results in long-term shelf stable while fermentation is not long-term shelf stable at room temperature.</sup></li><li><sup>Pickling process is by adding salt/vinegar to vegetables while fermentation is by adding brine to vegetables (Nirmal, 2010).</sup></li><li><sup>Pickling is a fast process while fermentation is a time consuming process (took 3-10 days).</sup></li></ul><div><br><strong>2. Fermented food that you've tried and which one do you prefer?&nbsp;</strong></div><ul><li><sup>I've tried is tempeh while pickled food that I've tried is 'pickled chilly', from both, I prefer fermentation as it has high nutritional values as it is a clean process and encourage good bacterias.</sup></li></ul><div><br></div>]]></description>

         <description><![CDATA[<div><strong>Food Irradiation: Is it Safe?</strong><br><br>Definition<br><sup>Food irradiation is a food safety method in which radiation is used to eliminate microorganisms that might cause food poisoning (foodborne illness). </sup><br><br>Example</div><ul><li><sup>Pasteurizing milk</sup></li><li><sup>Canning food &amp; vegetables</sup></li></ul><div><br>How it helps preserve food?<br><sup>Ionizing radiation (x-ray or gamma ray) delivers enough energy to the bacterial or mould cells in the food to cause chemical bonds to breakdown. This causes the microbes to die or stop reproducing, resulting in less disease or spoiling. </sup><br><br>Opinion<br><sup>In my opinion, irradiation food is not that harm as it does not affect most food, however at a certain high ionizing dose, it may affects on the chemical properties of food instead of nutrients (Hossein, 2012). Hence, it is safe to be consumed.
