         <description><![CDATA[<p><strong>Pachamanca</strong> is a traditional Peruvian dish cooked underground. The name means "earth pot" in Quechua. It is made with different types of meat, such as <strong>chicken, pork, lamb</strong>, or <strong>guinea pig</strong>, and is seasoned with <strong>herbs and spices</strong> like <strong>huacatay</strong> and <strong>cumin</strong>.</p><p>The meat is cooked together with <strong>potatoes, sweet potatoes, corn, fava beans</strong>, and sometimes <strong>cassava</strong>. All the ingredients are placed on <strong>hot stones</strong> underground, covered with leaves (usually banana or corn leaves), and left to cook slowly.</p><p>Pachamanca is usually prepared for <strong>special occasions and celebrations</strong>, especially in the Andes region of Peru. It is a meal meant to be shared with family and friends.</p>]]></description>
