But the reflections are still incredibly shallow. Not sure how to improve that. Could they interview each other? Could they record an interview and be instructed (motivated) to challenge each other's answers?

Have a group discussion... start with an issue. Let's say the kids want to focus on climate change. Have a discussion where we find local and immediate indicators of the issue. This will enable the students to target real things, rather than giant global things. The giant global issues almost inherently lend themselves to amorphous, bullshit-y projects.
