I love how you made connections between body and mind since body is more commonly associated with health compared to mind. I believe the gradual release of responsibility is a good way to slowly observe the students and see how they fair with the task which can be their assessment,

I do wonder about the time management between activities; they're all gorgeously detailed, but I almost feel like they could all function as separate lessons. The tasks need a fair amount of set-up or discussion (book-reading for Pete the Cat, drawing time, movement activities) so you may find yourself running out of time to be as in-depth as needed at the end. Perhaps linking some of the tasks (role-play + movement task) could help with time management.
