Oyster Omelet

The dish we are going to introduce is "Oyster Omelet." Have you ever seen this food? If not, let me show you some information about it. It is a food that represents our culture because it can be found in nearly all night markets, and it's popular with both local people and foreign visitors. Another reason is that it's cheap. With common ingredients, sellers can keep the price low. As a result, ordinary people as well as rich people can afford this mouth-watering dish.

There are two different versions of the origin of oyster omelet. The first version is that once upon a time, a Chineses navy ship led by Zheng Chenggong landed in Tainan and batteled against the Dutch army. Due to inadequate food supplies, Zheng Chenggong's soldiers used local ingredients to create this dish. The second version is that it originated from a local dish in Fujian province, China. Since it made its way to Taiwan, it has become popular among the Taiwanese.

It is mainly made of oysters, eggs, Chinese cabbage, and green onions. Below is its recipe:

Step 1:

Put oysters into the pan and fry them until they slightly change color.

Step 2:

Add some starch and chopped green onions.

Step 3:

Wait until it starts to solidify, and then add eggs.

Step 4:

Fry until it turns lightly crunchy, and then add Chinese cabbage. Fry for a while, and then you can flip it over.

Step 5:

After flipping, cook it for a little longer, and then place it on a plate.

Step 6:

Drizzle the sauce over it, and you will have a delicious and nutritious oyster omelet!

Over time, the oyster omelet has evolved, with variations that include shrimp or calamari. If you're a vegetarian, you can replace seafood with tofu and mushrooms, and it will still taste excellent. So, next time you see a vendor selling oyster omelet, why not give it a try?

New Taiwan Dollar banknotes

We are going to introduce the “New Taiwan Dollar banknotes”.

The picture of the them represent Taiwan's iconic places, cultures, and unique species.

First, we have the 100 NT$ bill, which is bright red and features Sun Yat-sen, the founding father of the Republic of China, on the front. The back shows the Chung-Shan Building, a historical site in Taipei.

Next, let's introduce the 200 NT$ note, which is green and depicts Chiang Kai-shek, the former president of Taiwan. On the reverse side, you can see the Presidential Office Building. However, the 200-dollar bills are not common because they are not printed in large numbers.

The following is the 500-dollar bill, which is brown. The front shows a group of children playing baseball, while the back displays a stunning image of a sika deer with Dabajian Mountain, representing Taiwan’s natural beauty.

This is the 1000-dollar bill, which is blue. The front shows children looking at the globe , and the the back features a Mikado pheasant along with Jade Mountain, Taiwan’s highest peak.

The last bill is 2000-dollar bill, which is purple. The pictures on the front are satellites, indicating that Taiwan is a high-tech country, while the pictures on the back are Formosan landlocked salmon and Mount Nanhu. This kind of bill is also rare in everyday life because its denomination is too large.

The wild animals depicted on Taiwan's banknotes are chosen based on the elevation of their habitat. For example, Sika deer typically live in plains below 500 meters above sea level, which is why it is shown on the 500-dollar bill.

Mikado pheasants live in mountain areas between 1000 above sea level, so it is shown on the 1000-dollar bill.

As for Formosa land-locked salmon, they live in the streams 2000 meters above the sea level; therefore, it appears on the 2000-dollar bill.

We are going to introduce one of the traditional foods in Hakka culture — Hakka rice noodles.

They are made of extra long grain enriched rice, and sweet potato starch. The reason why we think Hakka rice noodles can represent Taiwanese culture is because they symbolize the multicultural aspect of Taiwanese culture.

In the past, the Hakka ancestors suffered from wars, banditry, and famine, which forced them to migrate frequently. After enduring long and arduous journeys, they had to rebuild their homes in challenging environments every time they settled in a new place. Therefore, they had to live with absolute frugality and hard work. Since fresh food was difficult to obtain and preserve for long periods, processed foods became an important part of daily life in Hakka cuisine. For the Hakka people, aside from the everyday consumption of rice and porridge, they also, like other residents of southern China, made use of the characteristics of rice to produce more durable preserved foods known as "rice cake." In Hakka cuisine, "rice cake" is highly valued. The term "rice cake" is equivalent to what the Hoklo people call "Kueh" (rice cakes). The Hakka grind rice into slurry with water, then press out the excess moisture to obtain rice flour, known as "glutinous rice ball." Various pastries and food items made from rice flour are referred to as "rice cake."

You can try authentic Hakka rice noodles in places like Kaohsiung and Miaoli. When traveling in Taiwan, give them a try!

Rattle Drums

The item we’d like to introduce is the rattle drum. You can still find it in some old-style stores today. It has three main parts: the drum, handle, and the beads with ropes.

First, let me introduce the drum. It is usually made of wood or bamboo, and the drum surface is often made from animal skin, like sheepskin or cowhide, and it’s often decorated with pictures of animals. These animalsoften have special meanings. For example, bats are common because the word for "bat" in Chinese, bianfu, sounds like the word for "blessing" (fu). People believe that seeing five bats together means "five blessings," which are health, long life, wealth, virtue, and a happy ending. Another common picture is the tiger, which stands for strength and courage in Taiwanese beliefs. Therefore, tigers are often drawn on rattle drums to show protection, keeping away bad things, and keeping peace.

Next, let me introduce the handles. In the past, the handles were made from wood or bamboo, about 10 to 15 centimeters long, but nowadays, most of them are made of plastic.

Last, let’s take a look at the ropes. The ropes are usually made from hemp or nylon, which are strong and last longer, so they won’t break easily. Small holes are made on both sides of the drum surface to let the rope go through and attach the plastic balls. When you turn the handle, the balls hit the drum and make a sharp, clear sound. Some rattle drums even have small bells to make different sounds.

Now let’s talk about the history of rattle drums. Rattle drums have been around for thousands of years, starting in the Han Dynasty. At first, they were used in religious events. Over time, they became a popular children’s toy. Taiwan became part of China during the Qing Dynasty, and that’s when rattle drums made its way to Taiwan. Today, they play an important role in Taiwanese festivals. During celebrations like the Lantern Festival or Chinese New Year, the sound of rattle drums adds to the fun. People believe the steady beat brings good luck and happiness.

For the elder generations, rattle drums bring back happy childhood memories. In the past, people didn’t have much money to buy toys, so these cheap drums became popular toys. So, they represent a simple life and they are associated with Taiwan’s rich local culture, making them a memorable part of senior citizens’ childhood.

These days, rattle drums are also used to teach music to young children. They are simple, easy to use, and help kids learn rhythm and coordination. You’ll also see them in many cultural performances in Taiwan, like traditional opera, and they’ve become a symbol of Taiwanese culture. When traveling in Taiwan, many tourists buy rattle drums as souvenirs, bringing home a special piece of Taiwan’s culture.

Divination Blocks

What we want to introduce is 'divination blocks', also known as moon blocks because they look like half-moon. They’re used in a traditional method called "tossing the blocks" to get guidance from deities. They are generally made of wood, but bamboo can also be made into moon blocks.

We think they really represent Taiwanese culture because people use moon blocks to understand the gods' response to their prayers. It’s a unique part of our culture that connects people with the divine.

You can find them in temples and buy them at stores that sell temple items. They come in many styles, and you’ll see them during lively festivals too.

Typically, the blocks are about the size of your hand. They have one raised side and one flat side. To use them, hold the blocks in your hand, toss them slightly, and see how they land. If one side is raised and the other is flat, it means the deity supports your decision. If both sides are raised, it’s a no. If both sides are flat, it’s a neutral answer, and you might need to ask again. People use them when they’re unsure about a decision.

Even though Taiwan has a lot of traditional cultures, we think temple culture really captures the essence of Taiwan’s history. It’s a part of Chinese culture and also influences temple practices in Korea.

(1) One side is raised and the other side is flat, meaning the god says "Yes.”

(2) Both sides are raised, meaning God says "No.”

(3) Both sides are flat, meaning God didn't give you a definite answer.

We are going to introduce the "pineapple cake," Since Taiwan is home to high-quality pineapples, we often use them in our snacks. One of the places where pineapples are widely grown is near our school, and this place is Guanmiao. This picture shows the mayor promoting Guanmiao’s pineapple.

Pineapple cakes are commonly enjoyed during tea time and they’re also popular souvenirs for visitors to Taiwan. You can purchase pineapple cakes at specialty stores, supermarkets, or online. The Taiwanese pronunciation of pineapple sounds like "Fortune comes." Therefore, eating pineapples or food products made of pineapples is considered to bring you good luck.

(Farm to Table)

Step 1:

Growing pineapple: If you want to grow a pineapple, first you have to choose a delicious species of pineapple. It takes about 18 months for the pineapple to become mature. That’s a long period!

Step 2:

Processing pineapple: After harvest, wash the pineapple, peel it, cut it into pieces, cook it and cool it.

Step 3:

Making pineapple cakes: Mix flour, butter, sugar, etc. into a dough, and then wrap the pineapple filling into the dough. Finally, bake it in the oven.

Step 4:

Packaging and selling pineapple cakes: Storekeepers decide whether to buy pineapple cakes through taste testing.

We hope you have gained a deeper understanding of pineapple cakes and that you will enjoy the pineapple cakes we’ve sent you.
