Coconut Rice

Ingredients

Ø 1 medium dried coconut

Ø 2 cups of rice

Ø Salt to taste

Ø 4 tablespoons of sugar

The Recipe:

1. First to start with this grated coconut rice recipe, separate the meat from the shell of the coconut, place it in a hot pan. The purpose is that the heat helps take it off. Help with a knife but be very careful.

2. Second, remove all the meat from the coconut, grate it or chop it very finely.

3. Now take it to the blender. Add just enough water to help the blending process. By the way, the water should be a little warm, not very hot.

4. Once the coconut is completely blended, strain it to get the coconut milk. Don't throw away the grated coconut.

5. When have the coconut milk, take it to the fire and add the salt and sugar.

6. After that, let it reduce until the liquid disappears, and the coconut oil (clear) and milk solids are left in the form of small brown lumps.

7. Blend the remaining grated coconut from the previous process again. This time add the water needed to prepare the rice. In this case, need four cups, that is, twice the amount of rice.

8. Add the small brown lumps to the coconut milk that we obtained. Let cook a little and add the rice.

9. Finally, check the salt point and allow the rice to cook completely. Serve the coconut rice warm. It goes well with fried fish, fried potatoes with garlic, green salad and panela water with lemon.
