         <description><![CDATA[<div>There are more than 50 types of lemongrass but the type most used in cooking is ornamental lemongrass (Cymbopogan citratus). This type of lemongrass gives a lemony aroma and taste to dishes. Other types of lemngrass include Citronella which is used in cosmetics and perfumes, Java Citonella which is a yellow or red - purplish colour and East Indian Lemongrass which has a lemon flavour with ginger undertones. </div>]]></description>

If the stalks are light then the lemongrass is dried out. <br><br>Preparing: If using whole then, slice the very bottom of the stalk and peel off the dried layers. <br>If chopping or pounding then, use only the bottom seven or eight as the rest of the stalk is not edible. </div>]]></description>
