         <description><![CDATA[<div>Inca cuisine wasn't the only factor on present day Ecuador's.  Most of the culinary concepts passed to Ecuador by Inca were through the Spanish.  The Spanish  learned cooking techniques related to potatoes.  After Inca was simply ruins, the survivors continued their style and the Spanish learned their ways.</div>]]></description>

         <description><![CDATA[<div>This one comes from the fusion.  The Spanish had a big impact on the basics to this dish.  Ceviche isn't solely Ecuadorian, it's eaten all over South America and some places in Europe, but it's a very common taste in Ecuador.  It's composed of squid, scallops, and shrimp.  Enhanced by lime juice, cilantro, onions, olive oil, tomatoes, and cucumber.</div>]]></description>
