LEARNING FRONT OF HOUSE DUTIES AND UNDERSTANDING RESTAURANT OPERATIONS

On the second day, my colleague taught me how to perform various tasks at the front, such as sweeping, mopping, cleaning cutlery, and setting the tables. The workload at the front wasn't too heavy, and since it was the fasting month, there were only a few customers, mostly non-Muslims. For everyone's information, the restaurant was running a promotion called "Makan Kaw Kaw," where customers could pay RM29.90 for unlimited refills within 60 minutes. This promotion included a choice of rice or pasta with roasted chicken, two side dishes, muffins, and water. The condition was that customers had to finish one set before they could refill.

This restaurant has four main sections: the front, where the waiter works; the middle section, which handles food for walk-in customers, orders via GrabFood, Shopee, FoodPanda, and takeaways; the third section, where food is prepared and the chicken is cooked and baked; and the fourth section, where plates and cutlery are washed. These were the tasks I learned on my second day.

LEARNING MENU KNOWLEDGE AND IMPROVING CUSTOMER INTERACTION

I started working at 9 am, on the third day I was able to learn little by little about the menu at the restaurant and was able to explain it to customers who asked about the menu, especially many customers who were interested in the Makan Kaw-kaw promotion. Many customers also made reservations to break the fast, I as a cashier learned to manage the tables that were still empty to be given to customers so as to avoid problems that occurred and not to inconvenience the staff who worked in the evening. I was able to learn how to work with other staff to deal with problems that occurred, for example, taking the wrong customer order, customers who canceled orders last minute and many other mistakes that I could learn,

In addition, I also learned how to key in customer orders using the cashier computer system.

At this restaurant, it is important to manage everything in an organized manner to make work easier and avoid mistakes during customer payments, which could lead to misunderstandings.

On my fourth day, I feel more confident in interacting with customers and explaining the menu clearly. Usually, customers will ask for our opinion when choosing a dish, and I’ll recommend KRR’s signature meal – the Quarter Meal – which includes a quarter roasted chicken, a muffin, and the customer’s choice of three side dishes.

Through this experience, I’ve learned to handle customers patiently and to improve the way I explain things so that people can understand me better.

HANDLING RESERVATIONS AND ORDERS DURING LUNCH AND IFTAR RUSH

Today was a busy day at the restaurant. There were a lot of Chinese and Indian customers who came to enjoy the Makan Kaw Kaw promotion. Some of them also came to redeem their meals through the Maxis app, so it got quite busy during lunch time.

In addition, there were a lot of Muslim customers who called in for reservations and also came in to make reservations for breaking the fast later in the evening. So I had to really focus while handling both the diners and the ones who made reservations.

As someone who is responsible for serving food and taking orders, I have to be extra vigilant to make sure everything runs smoothly and there are no mistakes to maintain the reputation of the restaurant. It was quite challenging, but I will get used to the fast-paced environment.

Today taught me how important it is to stay calm and organized, especially when it is busy. I am also learning how to balance different tasks at once, communicate better with customers and work as a team with coworkers.

I was instructed to check the food items in the middle section, and if any were running low, I had to restock them by taking more from the walk-in freezer located in the back work area.

Even during this time, many customers were still making reservations, and as expected, the restaurant was fully packed during iftar. This was my first time working the evening shift and handling customers who came to break their fast.

I was assisted by several of my coworkers and the manager in preparing the customer orders carefully to avoid any mistakes and to ensure that all meals were served on time before iftar.

My manager is still concerned about my performance, so I am still being closely monitored during my shift. Since I am still learning, I am sometimes asked to serve food directly to customers at their tables to help me gain more experience in customer service. This usually happens when I take too long to key in or prepare the orders.

I realize that I need to improve my speed and accuracy to avoid delays and provide better service. Before the busy period started with food orders for customers who made reservations for iftar, I was stationed at the front to take and manage orders from those customers. I also had to confirm their bookings to avoid last-minute cancellations, as this could lead to losses for the restaurant. In addition to managing customer orders, I also helped my manager and coworkers in preparing the meals for customers.

I learned how to work more efficiently, as it is crucial to complete tasks quickly and accurately, especially during busy times. This ensures that customers don’t have to wait too long for their food to arrive.

Throughout this experience, I’ve come to realize the importance of teamwork and communication in a fast-paced environment.

FOOD PREPARATION EFFICIENCY AND THE IMPORTANCE OF CLEANLINESS

For this evening, I continued my routine tasks as usual, which is to check and replenish the stock of food products that need to be placed in the middle to facilitate the process of preparing customer orders during operating hours. This task is very important to ensure that all the ingredients and items needed are always sufficient so that the work is faster and the food preparation runs smoothly, especially for iftar customers.

Before the shift starts, our manager gives a brief but important briefing regarding food hygiene and the level of sanitation that needs to be maintained. He emphasizes that every plate used to serve food to customers must be completely clean, odorless, and free of any fingerprints or dirt when serving to customers. The appearance of the food served plays a big role in providing customer satisfaction.

We are also reminded of the importance of maintaining personal hygiene and a neat and professional appearance, in addition to ensuring that the work area is always in an orderly and clean condition. These practices not only help in maintaining high service standards, but also give a good image to the restaurant as a whole. Consistency in maintaining the quality of work and cleanliness is very important to ensure that customers receive the best dining experience every time they visit.

The manager, Miss Jannah, gave a briefing on the rules that I had to follow while working there. She also explained that the restaurant operates in three shifts: morning, afternoon, and evening. For my first week, I was assigned the morning shift as a waiter.

TAKING CUSTOMER ORDERS USING THE CASHIER SCREEN SYSTEM

This photo shows me taking customer orders at the cashier counter using the POS (Point of Sale) screen system at Kenny Rogers Roasters. As part of my front-of-house responsibilities, I learned how to operate the system efficiently to enter customer orders accurately, make changes when needed, and process different types of payments including cash, card, and e-wallet.

Handling the cashier screen taught me the importance of accuracy and attentiveness. Every detail from selecting the correct menu item to confirming the quantity and side dishes must be checked to ensure the customer's order is correct. I also needed to communicate clearly with the customer and remain calm and polite, especially during peak hours.

This task helped me build confidence in using restaurant technology and strengthened my customer service skills. I learned how digital systems support daily operations and how quick, professional service at the counter contributes to a positive customer experience.

ARRANGING PLATES AND CUTLERY

Today’s focus was on preparing and arranging the plates and cutlery needed for meal service. Early in the shift, I helped unpack clean plates from the dishwashing area and sorted them by size and purpose main plates, side dish bowls and dessert plates. I wiped them down and ensured there were no watermarks or leftover stains before restocking them at the service counter.

In addition, I arranged forks, spoons, and knives into proper trays for self-service or dine-in setups. I also helped set up the cutlery for dine-in customers by wrapping them in tissue and placing them in clean holders. Throughout the day, I monitored the stock level to make sure we never ran out during peak hours.

This task taught me the importance of preparation and organization. When plates and cutlery are arranged properly, the service team can work more efficiently, and customers receive their food without delay. I felt responsible knowing that my role supports the entire workflow of the restaurant.

My main duties included preparing side dishes, arranging food items according to standard portion sizes, and ensuring cleanliness at the workstation.

Muffins at Kenny Rogers Roasters are very popular because they have a unique flavor. Customers usually look for muffins at this restaurant and often give positive feedback. This restaurant offers two flavors: vanilla and chocolate chip muffins. I learned how to make the muffin batter, which is quite easy to prepare because the flour used already contains flavoring and only requires additional ingredients such as oil and water, measured according to the provided recipe. The finished muffin batter is stored in the walk-in chiller for easy baking and preparation by the staff.

I also learned the importance of cleanliness in food preparation and maintaining hygiene in the kitchen environment. Although it was hot, it was fun and gave me a better understanding of the effort that goes into preparing food before it reaches customers.

Today, I was given the opportunity to observe and slowly assist the cashier system under close supervision. One of the senior staff explained how the POS (Point-of-Sale) system works, including taking orders, applying discounts or vouchers, and handling cash and card transactions.

It was quite exciting to see how technology plays a key role in fast service. Accuracy is key, although small errors in input can cause confusion in the kitchen or at the customer’s table. One of the kitchen staff allowed me to assist in recording cold storage and hot holding temperatures using a food thermometer. These readings are part of daily safety logs required by the outlet.

I learned how each food item has a required minimum temperature to ensure safety, especially for proteins like chicken and dairy-based side dishes. I helped update the temperature logs and label prepared foods with time stamps to ensure freshness.

This was a valuable learning experience because it gave me insight into how food safety is not just about cleanliness, but also strict documentation and awareness of storage practices. The queue was long most of the day, especially around lunchtime. I supported both front and back stations—serving food, wiping tables, and assisting with order pick-ups. I was constantly on my feet, which made me realize how physically demanding F&B work can be.

However, I did feel more confident handling pressure. I noticed I was faster in keying in orders and more fluent when explaining the menu. I even managed to calm down a slightly upset customer who had been waiting too long. I apologized sincerely and offered a drink while she waited.

She left satisfied, which was a small but meaningful success.

At the end of the shift, our manager praised the whole team for staying strong during the peak period. It felt great to be acknowledged and to see how cooperation made everything smoother. This experience has really improved my time management and resilience.

CUTTING ROASTED CHICKEN AT KENNY ROGERS ROASTERS

This photo shows me cutting freshly roasted chicken at Kenny Rogers Roasters during my internship. The chicken has just finished cooking in the oven, and my task is to portion it correctly for serving. I use a special cutter and follow the standard cutting method to ensure each piece is consistent in size and presentation.

This process requires focus, accuracy, and proper handling to maintain hygiene and food quality. I learned how to identify if the chicken is cooked perfectly by checking the texture, internal temperature, and appearance before cutting. It is important to handle the chicken carefully to avoid damaging the meat and to ensure the final product looks appetizing for customers.

This task taught me how essential back-of-house operations are in delivering a great customer experience. Even though customers don’t see this process, it directly affects the quality of what they receive. I gained confidence in handling food safely and professionally, while also understanding the importance of speed and efficiency during busy service times.

While these tasks were repetitive, they were essential to the restaurant’s preparation for the lunch rush.

In addition to preparation work, I observed the grill staff managing the signature rotisserie chicken. This role helped me improve my communication skills and taught me the importance of being attentive to customer needs.

I also learned how to manage order accuracy and timing, especially during busy hours. I had to coordinate with the kitchen team to ensure orders were processed smoothly.

There were moments when I had to stay calm under pressure and respond politely to customer inquiries.

Before ending my shift, I helped clean the counter area, restock paper bags, and prepare receipts. It was my first time handling cash and digital payments in a real setting, and I appreciated the trust given to me. This experience built my confidence in customer service.

FOOD DELIVERY PREPARATION: ENSURING ACCURACY AND CUSTOMER SATISFACTION

On Friday, I was involved in helping with food delivery preparation. I was responsible for checking online orders, packing food properly, and labeling each package accurately. I had to double-check that every item in the order was correct before sealing the bag.

This task helped me understand the importance of accuracy and time management, especially since food must arrive fresh and complete. I also learned how to communicate with delivery riders politely and efficiently when handing over orders.

In the afternoon, I helped organize delivery supplies like containers, tape, and stickers. I also took note of customer feedback from online reviews. It was satisfying to be part of the process that connects customers to our food outside the restaurant.
