Borsch is one of the biggest symbols of Russian cuisine. This is a Slavic soup, originally prepared from wild borscht, from which it got its name. For a long time, the recipe was passed by word of mouth. In the 16th century it was mentioned in the Novgorod Yamsky books. In the 18th century knowledge about borsch went beyond the borders of the Russian Empire. And now it is forever fixed in history as the main symbol of Slavic, and especially Ukrainian cuisine.

Traditionally, there are pancakes with caviar.

These days you can also eat pancakes with chocolate paste.

Recipes for okroshka appeared at the end of the 18th century. According to some historians, okroshka was invented by barge haulers. For lunch, they were fed on dried roach. The workers' teeth were sick, so they had to soak the roach in kvass. Later, vegetables such as baked potatoes, radishes, cucumbers, and turnips were added to the "kvass roach". Okroshka is still loved in Russia and people often eat it in the summer on hot days. Nowadays, sausage or meat is usually added instead of fish, and sometimes kvass is replaced with kefir.

You need to cook the potatoes and eggs, then cut into small cubes. Cut cucumbers, radishes, meat, and greens. Mix everything and pour kvass or kefir, add salt.
