This is particularly noticeable in Jazz, and the possibly the most famous example of quoting is 'the lick', a phrase which has no clear origin but has nonetheless been played by some of the most prominent jazz musicians in history.

Using a video which shows jazz musicians quoting this musical phrase in various ways, students can analyse how each musician changes the phrase to suit the song they're playing.
