The aroma of coffee

The smell of coffee is very strong and distinct. It has to do with the Maillard reaction, the reaction between proteins and sugars in the coffee beans producing a range of products. The degradation and decomposition of other compounds in the coffee beans can also produce aroma compounds.
Thousands of molecules are involved with the aroma of coffee, but most of those are extracted in the actual process of brewing the coffee.
Other aroma contributing families of compounds in include aldehydes, which generally add a fruity, green aroma, furans, which contribute caramel-like odours, and pyrazines, which have an earthy scent.

Chemical Reactions occur at a faster rate with higher temperatures because the molecules bounce around a lot more, meaning they have more energy.
When they bounce around more, they are more likely to collide. That fact means they are also more likely to combine. When you lower the temperature, the molecules are slower and collide less. That temperature drop lowers the rate of the reaction.
In this video you see the pellet dissolve in the hot water at a rapid rate. But in the cold water it took a long time for it to dissolve.

Solid (Precipitate)

In this video a solution of lead nitrate is dropped into a solution of potassium iodide forming a yellow lead iodide precipitate. This occurs because it forms potassium nitrate, which is soluble and still contains water while lead iodide is insoluble and then forms a precipitate that is yellow in color. So when the reaction occurs in a liquid solution, the solid formed is called the 'precipitate'.

In this video he mixed iron filings and sulfur powder. After heating it and adding other components, it created the new substance called iron sulfide. Soon after he adds acid to the newly created iron sulfide, it starts forming a gas called hydrogen sulfide. When the iron filling and sulfur powder are just a heterogeneous mixture they can attract to a magnet, but after going through the chemical change they no longer can attract to the magnet. This reaction can be used to illustrate elements, mixtures and compounds.
