If the Sabbath in the Old Testament is the seventh day, why do Catholics rest and worship on Sunday, the 1st (or "8th" day) of the week?

Are Christians in general and Catholics specifically breaking the Ten Commandments? If we can seemingly change the adherence to the Ten Commandments with a Sunday Sabbath, why not other ones of the ten commandments?

What does the resurrection and the new creation have to tell us about why the new Sabbath of the new covenant is now celebrated on Sunday?

In ancient Judaism the sabbath was from sundown on Friday to sundown on Saturday. If Sunday is the Christian sabbath, should we celebrate it from sundown on Saturday to sundown on Sunday? Is this why attending an anticipatory Mass on Saturday evening fulfills our Sunday obligation?

The option of attending an anticipatory Mass on Saturday evening has nothing to do with the fact the sabbath began at sundown. This provision was originally introduced for Catholics who had to miss Sunday Mass for a good reason (for example, because they had to work). The 1983 Code of Canon Law simply states: “The precept of participating in the Mass is satisfied by assistance at a Mass which is celebrated anywhere in a Catholic rite either on the holy day or on the evening of the preceding day” (can. 1248, 1).

The Last Judgment - Matthew 25:31-46

What is the final judgment and why are there two of them? What is the difference between the Particular Judgment and the General or "Last" Judgment?

The Last or General judgment consists of Christ coming back in glory. Secondly, it encompasses the resurrection of the dead in order to be judged. Finally, judgment will happen on everyone.

But, why does God have to re-judge everyone when Christ returns, since many have already died and were judged immediately after their death? Doesn't this seem redundant?

No, because there are two distinct elements about the General Judgment: While the particular judgment will show us the final destination of our individual soul, the final judgment will disclose all of the consequences of our particular actions. Secondly, we will also see the ultimate meaning of all history and of all creation, divulging how God's hand was at work throughout all of human existence.

The Last Judgment - Matthew 25:31-46

Death, judgment, heaven, and hell—the four last things—are popular enough topics among Christians discussing the end times; but there’s more to these things than just our own personal end. In this video, Fr. Mike explains how, as the Catechism teaches, in the Last Judgment “the ultimate meaning of the whole work of creation and of the entire economy of salvation” will be made known to us (CCC 1040). Matthew 16:13-19 - Peter's Declaration That Jesus Is The Christ

In Matthew 16 we see perhaps the clearest exposition of the founding of the Papacy by Jesus. Jesus not only installs Peter to an office -- that of the papacy -- but does so with unique and specific words and images that, when read in light of the Old Testament, helps us unpack what Jesus' intention was on this occasion. After all, that should be our goal with this and any other passage of Scripture: What was Jesus' intention when he used the words and actions he did, so that we can better conform our intellect and wills to what he asks of us and to what he intended to accomplish in his ministry.

In addition, Dr. Pitre also covers Matthew 23 where Jesus gives the other apostles similar authority to that of Peter and the office of the papacy, but notes one major difference that is lacking.
