Even though I'm far from Italy now, whenever I yearn for a taste of home, I turn to this simple yet comforting dish, cooking it for my daughter and myself.          <description><![CDATA[<p>Pidi and Kozhi is a classic dish from Kerala, South India, a total comfort food combo of soft rice balls in creamy coconut milk, served with spicy chicken curry. It’s a big deal in Kerala Christian homes, especially during festivals like Christmas and Easter.</p><p>As a kid, I was obsessed with it because my mum only made it on special occasions. It takes forever to cook, but somehow she’d make it taste like pure love. Even now, I still have a major weakness for it,  one bite and I’m instantly that happy kid again 😋.</p>]]></description>

         <description><![CDATA[<p>🥢 Japanese Okonomiyaki</p><p>Okonomiyaki is a savory Japanese pancake made with cabbage, meat or seafood, and a tasty batter. The name means “grilled as you like,” because you can add any ingredients you enjoy. It’s a fun and popular home-cooked meal in Japan.</p><p>---</p><p>Ingredients (for 2 servings)</p><p>1 cup (120 g) all-purpose flour</p><p>2/3 cup (160 ml) water or dashi</p><p>1 egg</p><p>2 cups finely chopped cabbage</p><p>2 tbsp green onion (optional)</p><p>4–6 slices of pork belly or bacon</p><p>Oil for frying</p><p>Toppings:</p><p>Okonomiyaki sauce, mayonnaise, bonito flakes, aonori (seaweed powder)</p><p>---</p><p>Instructions</p><p>1. Make the batter: Mix flour, water, and egg in a bowl.</p><p>2. Add cabbage and green onion. Mix lightly.</p><p>3. Heat oil in a pan. Pour half the batter into a circle shape.</p><p>4. Top with pork slices. Cook on medium heat for 3–4 minutes per side until golden brown.</p><p>5. Serve hot. Add okonomiyaki sauce, mayonnaise, bonito flakes, and aonori.</p><p>---</p><p>🍳 Tip:</p><p>You can also add shrimp, cheese, or mochi for extra flavor!</p><p><br/></p>]]></description>

Growing up on the Isle of Man, I naturally have fond memories of British dishes such as pies, roast dinners, and the local favourite - chips cheese and gravy. But my mum also loved to try different things, and brought recipes and ideas from her homeland in the southern USA. Jambalaya is one of those - a hearty spiced rice dish, which always brings back good memories.</p>]]></description>
