I would say the sauce held well together because it was blended, and so it was guaranteed to be well incorporated. However, after cooling off I did see some solids rise to the top in the hollandaise, and a decent amount of curdling collecting at the bottom. It was not the same as store-bought, but there was a decently balanced taste. Personally, I don't like anything with a strong egg taste, and this was borderline too 'eggy.' However, it wasn't too oily, so I had no complaints. The hollandaise had a more opaque, softer yellow color. Both were too shiny to look like their proper forms. Since the viscosities of both sauces turned out to be disappointingly liquidy, I would rate the appearance of both as sub-par.
