The most simple explanation for why observant Jews follow Kosher laws is that the Torah says to. There is little evidence that the Kosher diet has any health benefits and the Torah does not give an explanation for these laws. However, the most observant Jews need no reason to follow the Torah-they just do.

How The Kosher Diet Works

Jews that observe the kosher diet must follow these rules, in addition to many others:
1. Jews may only eat land animals that chew their own cud and have cloven hooves
2. In regards to aquatic animals, Jews may only eat those with fins and scales.
3. Generally, all birds are permitted, excepting birds of prey. Chickens, ducks, geese, turkeys, etc. are examples of kosher birds.
4. As for rodents, amphibians, and insects, most are forbidden(there are some exceptions to insects).
5. Any products of forbidden animals are also deemed non-kosher(milk, eggs, etc.)
6. The consumption of animal blood is forbidden(in the Torah, it explains that this is because the soul of the animal is believed to be held in the blood).
7. Dairy and meat cannot be consumed or prepared together(there are additional rules for the consumption of different food products).
