not all of them come from producers. Some of the ingredients are stuff you can find in nature pretty easily.
I added a design on the outside of a few of them to also represent something from the region.

It was good to research about the region where I worked as a student and to discover a new product and use an old classic, both of which represent the best that Ireland has to offer.

I also found it very interesting to learn about producers and products from all over the island and new ways to utilise them.

I thoroughly enjoyed researching produce from these counties. We are a big fan of Jameson and from basing my dessert on a hot whiskey, trying to find flavors that worked based on produce available was an easy enough task although time consuming as there is so much available. Every ingredient has its own story and trying to divide between counties became more difficult due to the love each producer has for their product.

I loved the sea salt with the Bush mills and the coffee foam and the way Emmanuel brought them together to create a dessert reminiscent of the Giant's Causeway.  I saw Mary's personal taste for a whiskey inspiring flavours to create her dessert and Helena's dessert  with goats cheese was unique and daring.
