I use AI to brainstorm and outline programs and handouts. First drafting stuff, massaging areas where I feel the writing can be improved, shortened, changed tone etc. (Sometimes I start with AI, sometimes I start with my own writing.. just depends what it is.)

I also use it to motivate me to working-- like if I don't know where to start or feel overwhelmed, I ask it to do it. Then just being mad at whatever garbage it made is usually enough to get me going.

I also teach about AI, of course, so there's that.

I've tried using it for other things like art reference, but the problem is, then I'm just learning bad stuff most of the time because what it gives me is wrong. I'd kind of worry about that aspect too with other things, so I'm careful about using it with stuff I don't understand or do well. But it can be handy for generating some art in a pinch (replacing clipart, basically), but it can be tricky to get something with either text or art that doesn't require more time to massage into shape than if I had just done it myself to begin with. So I have to be selective.

For example, I've used newer versions to pull information out of DOCX of PDFs into a spreadsheet (older AI completely failed at this, and its also useless if the document is too large).

For some things, it's better to use it to, say, write a script for Excel or Sheets and then massage that until its perfect and use that than to try to use it to analyze the spreadsheet since you have to do so much error checking and it doesn't consistently produce reliable results.

I've tried using it to find similar books to others and such and have too much trouble with it either giving me fake books or giving me real books but completely misrepresenting what the book is about in order to please me, though I did find some interesting books due to it. I also failed to get it to successfully find (older) books I couldn't remember the name of.

Once or twice I've used it to massage an email if I was worried I was sounding too mean.

I also used it to make an absolutely hilarious cover letter that I swear to God I'm going to use someday in which it tells the prospective employer that I am "an experience."
