naleśniki
Ingredients:

-10g cocoa 140g wheat flour a pinch of salt
-2 eggs 250ml
-milk 100ml carbonated mineral water (or milk)
-1 tablespoon vanilla sugar -frying oil or clarified butter

Pour flour, a pinch of salt and cocoa into a bowl. Pour the milk with water and stir vigorously with a whisk so that no lumps are formed. Add the eggs and mix again. (You can also mix the dough with a mixer). If there are lumps, you can pour the dough through a strainer. It is best to leave the dough for at least 30 minutes to rest (but not necessary). Preheat a frying pan (preferably a Teflon one). Add a little oil. (I recommend spreading the oil with a silicone brush). Stir the dough again. Pour a little dough with a ladle into the center of the pan and, agitating it, spread it over the entire surface. Fry until the bottom is browned and the top dough is curd, i.e. no longer liquid. Turn over with a spatula and fry for a moment until golden.
