         <description><![CDATA[<div>Lactose is a chemical compound made by a covalent bond and has a chemical formula of C12H22O11 and is made from the element hydrogen, carbon, and oxygen. Besides the name lactose, this compound is also known as milk sugar. This "milk sugar" is made up from simpler sugars known as galactose and glucose. The word lactose derives from the Latin word lac or lactis, meaning milk in English, and ends with the suffix -ose which is found at the end of the names of sugars.</div>]]></description>

         <description><![CDATA[<div>Lactose is a disaccharide sugar, or a sugar made from two simpler sugars, is found in milk and makes up from 2-8% of the milks weight. It is found in whey, which is the watery liquid portion of milk that is found after milk has been curdled and strained which is a procedure performed when producing cheese. The lactose is then extracted from the whey along with all the other major proteins found in whey.</div>]]></description>

         <description><![CDATA[<div>The first crude isolation of lactose was by an Italian physician named Fabrizio Bartoletti. He discovered the compound in milk. Then in 1780, lactose was identified as a sugar by a Carl Wilhelm Scheele. In 1812, scientist Heinrich Vogel then recognized that by hydrolyzing lactose, or breaking down the compound by using water, he was able to extract one of the sugars that makes up lactose, glucose. In 1856, Louis Pasteur (French chemist and microbiologist) crystallized galactose, the other sugar found in lactose. The name lactose was then made in 1843 by another French chemist by the name of Jean Baptiste Andre Dumas.</div>]]></description>
