         <description><![CDATA[<div>Turkish Baklava<br>INGREDIENTS<br>1 (16 ounce) Package phyllo dough<br>1 pound chopped nuts<br>1 cup butter<br>1 teaspoon ground cinnamon<br>1 cup water<br>1 cup white sugar<br>1 teaspoon vanilla extract<br>½ cup honey<br><br><strong>Directions<br></strong><br></div><ol><li>Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9×13 inch pan.</li><li>Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2 – 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 – 8 sheets deep.</li><li>Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp.</li><li>Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes.</li><li>Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up.</li></ol><div><br></div>]]></description>

It’s very refreshing to have chilled soup on a hot summer day.<br> <strong>Ingredients for Okroshka:</strong> <br> </div><ul><li>8 cups cold water </li><li>⅓ cup sour cream </li><li>3½ Tbsp Vinegar divided </li><li>2½ tsp Salt </li><li>3 Tbsp chopped dill (fresh or frozen) </li><li>½ cup green onion, finely chopped </li><li>½ lb good ham, diced (we used black forest ham) </li><li>3-4 medium cooked potatoes, peeled and diced </li><li>3 hard-boiled eggs, diced </li><li>3-4 cucumbers, diced <strong>Instructions</strong>  </li><li>While potatoes are cooking, boil 3 eggs and cool them in ice water. </li><li>Next, dice 3 eggs, 3-4 cucumbers, ½ lb of ham. Also chop 3 Tbsp of dill and ½ cup of green onions. Place everything in a large pot. </li><li>In a separate large bowl, whisk together 8 cups of cold water, ⅓ cup of sour cream, 2½ Tbsp of vinegar, 2½ tsp of salt until combined. Pour the mixture in the pot with the rest of ingredients. Stir to combine and serve.  </li></ul>]]></description>

         <description><![CDATA[<div>Traditional pork and beef stuffed cabbage sauerkraut<br><br></div><div>Ingredients for meat stuffed with sour cabbage</div><div>- 400 grams of minced pork</div><div>- 300 grams of minced beef</div><div>- 2 onions</div><div>- 2 handfuls of rice</div><div>- 3 tablespoons tomato broth</div><div>- 1 bunch dill</div><div>- 1.5 kg sauerkraut- ground pepper</div><div>- 6-7 peppercorns</div><div>- 2 bay leaves</div><div>- Dried thyme-200 Grams of smoked bacon ( or any kind of smoked meat )</div><div><strong>&nbsp;Method meat stuffed with sour cabbage:</strong></div><div>&nbsp;Clean the onions and chop them finely, then put in a little oil to cook at low heat in a covered pot until it becomes glassy. Add rice held prior few minutes in cold water and 1 tablespoon broth. (Rice put about 2/3 cup). Allow to simmer 2 minutes, stirring constantly. Add a spoonful of broth and let heat 2 minutes. In a bowl or large bowl put the meat with onion and rice broth tempered earlier, 1/4 teaspoon ground pepper, 1/2 teaspoon dried thyme, finely chopped dill. Mix well. If cabbage is salted, not put salt and if it is too salty, leave it in hot water at least an hour before being used.Once you have prepared the meat, peel the leaves of cabbage spine, cut ribs thicker, place the sheet of cabbage palms, take the meat with a spoon and run sheet cabbage around meat, taking care to cover the cabbage heads sărmăluţei, not to flesh out. Cabbage thus prepared are put in a saucepan large enough, side by side in the circular shape. On the bottom of the pan put a tablespoon of oil previously 2-3 whole cabbage leaves and a 1 cm layer of finely chopped cabbage. After you finish a layer made of cabbage, put a spoonful of broth over them diluted in a cup of water and a few pieces of smoked meat. Among shred cabbage and 2 bay leaves dry. Then continue with another layer of cabbage, and cabbage Smoked and again until you're done. Above the last layer of cabbage place a 1 cm layer of cabbage chopped and scattered yet a spoonful of broth. Fill with water until it exceeds a few cm stuffed cabbage. Cover the saucepan and boil over medium heat about 40 minutes.Check occasionally to not fall too much water and supplemented as needed. After that gives heat to low and let themselves be ready until at least another hour. Basically you need to remove a Cabbage rolls on a plate and a taste sprouts should be thoroughly cooked . If you want , you can cook them in the oven , but it will take some time , at least 2-3 hours. But will be tastier .&nbsp;</div>]]></description>

INGREDIENTS, FILLING: SERVES 6

• 1½ lbs. ground lamb or ground round or ¾ lb. each lamb and lean ground top round 
• ½ cup rice or bulgur, or a combination
• ¼ cup green bell pepper, chopped fine
• ¼ cup armenian parsley,chopped
• 8 oz crushed tomatoes or tomato sauce
• Cayenne pepper to taste
• ¼ cup lemon juice
• 1 teaspoon basil
• 1 teaspoon black pepper or to taste
• 1 teaspoon salt or to taste
• 1 medium yellow onion,chopped
• 1 cup water, enough to cover the vegetables.

DIRECTIONS: 

1.  A variety of vegetables can be used including red, gold, and or green bell peppers. Also used are eggplant, zucchini squash (large), tomatoes,
     potatoes and onions. 

2.  Scoop out the vegetables leaving an opening for the filling of about 1½ - 2 inches in diameter and about 2 - 3 inches deep. Fill the scooped out
     vegetables with the filling mixture and place upright in a large covered casserole. 
3.  Pour over the crushed tomatoes or tomato sauce with broth or 1 cup of water. Cover and cook in a preheated 350℉ oven for about 1 - 1½ hours.

4.  Try this dish served with a dollop of mahdzoon (yogurt) over the filled vegetables.

Add beef, carrots, onion and black peppers. Wait until the water starts boiling and then leave the broth to simmer. While our broth is simmering, let’s prepare vegetables.</div><div>First, peel potatoes, carrot, onion and beet. Wash the vegetables. Cut potatoes into small cubes, grate carrot, grate beet and chop onion. Then shred cabbage into thin pieces. </div><div> </div><div>In 45 minutes take carrots and onion out of the saucepan. Add bay leaves, salt and beans into the boiling broth, let them simmer for 20 minutes. Heat the frying pan, pour oil, then add grated beet and let it stew for 2 minutes, then add tomato paste and leave it for about 1 minute. After that, add this “beet mixture” into the saucepan. </div><div> </div><div>Now it’s high time to add potatoes to the broth and to prepare tomatoes. Boil some water in a small saucepan, then put tomatoes into the boiling and leave them for a while. Then take tomatoes out and put them into the cold water. Cut vegetables on the top, now we can easily peel them. Cut tomatoes into small pieces.</div><div> </div><div>And now heat the frying pan, add some oil. When the oil is heated, add chopped onion and fry it to the golden color, then add grated carrot and tomatoes. Stew the vegetables for 1 minute.</div><div> </div><div>Put cabbage into the saucepan, add stewed vegetables and sugar. Now press the garlic and add it into the borshch.          <description><![CDATA[<div><strong>Mtsvadi – THE DISH OF KINGS<br>i</strong><strong><em>ngredients:</em></strong><br><br>2 kg of pork/mutton/veal<br>4-5 onions<br>600-700 ml of freshly squeezed, natural pomegranate juice<br>2 tbsp of oil<br>Salt and pepper<br><br><strong>In some cases dried spices (Khmeli suneli) or coriander seeds are added also</strong><br><br><strong><em>Step-by-Step:</em></strong><br><br>Cut the meat into medium-sized pieces and slice onions into rings. Put the two in a pot, mix and sprinkle with dried spices, pepper, finely pounded coriander seeds and salt. Pour on pomegranate juice, two spoonfuls of oil and mix again. Take a large plate, flip it and cover the spiced-up meat. Make sure to put something heavy on the overturned plate to ensure that it presses down hard and the meat remains completely submerged in pomegranate juice.<br>Ideally the meat should remain that way in the fridge for 2 days, but if you are in a rush, one day is enough.<br>Skewer the meat and roast it on hot coals.&nbsp;<br>Remember: As the fat drips off the meat (especially with pork) it will often cause the hot coals to flame up. Watch carefully and make sure to prevent the flames from burning the meat. Remove the skewer for a few seconds if the flames are large.<br>Tip: Use a stick to push the coals around to put out the flame. Make sure the coals are evenly dispersed. The trick is to have all the glowing coals burning (not flaming) consistently.
