Kokoda is a creamy, exotic Fijian dish. It is raw fish cooked in lemon; it swims in coconut milk that goes alongside some lively veggies, which consist of tomatoes, spring onions, capsicum, red onions, and chillies. The freshness through the citrusy of the lemon which cooks the fresh fish, cuts through the creamy coconut milk indulging the lively cut-up vegetables. In my culture, we eat Kokoda typically when coming together. Being indo-Fijian, meaning being the Indian descent allowed me to learn about my own culture through taste buds. The rich coconut milk reminds me of the coconut trees in Fiji. Having adapted to the native Fijian foods makes me feel connected with my identity of being a Fijian. I love making this dish with my family. Making food together brings us together and is our type of cup of tea! Kokoda is very simple to make but worth millions with how deliciously refreshing it is. It is extremely healthy and contains various nutritional benefits. The Australian dietary guidelines outlines the five food groups ( eatforhealth, n.d. ). Kokoda targets three out of five, lean meat being fresh raw fish, vegetables being present and reduced fat from coconut milk target the australian dietary guideline.

1 rainbow runner fillet, about 1 kg, skinned and pin boned (or you could use snapper, blue eye trevalla or tuna)
2 limes or lemons, juiced
1 small red onion, finely diced
4 small green chillies, chopped
3 vine-ripened tomatoes, peeled and diced
250 ml (1 cup) coconut cream
1 tsp cracked black pepper
salt, to taste
½ bunch coriander sprigs, to garnish

Place the fish in a bowl with the juice of one lime/ lemon after cutting the fish into 1 cm pieces.
My definition of health

My definitions of health are highly personal and experienced. To me, health means more than simply being free from disease. Health is multidimensional. From where I am from, how we value health, is a state in which a person’s physical, emotional, mental, financial, and spiritual goals have been reached. The beautiful island of Fiji is filled with herbal medicine and natural remedies that lie on the spiritual island. It's attainable for me to have a healthy connection with food because of the abundance of fresh foods such as vegetables, free-range meat, and organic fresh produce. I now accept that the food I consume is organic since I am aware of how and where it is produced. Being surrounded by fresh home-cooked meals and seeing the process being made with such love allowed me to understand my own culture and its correlation with health. Being Indo-Fijian, our food is Indian food. Our rich foods have Indian cuisine could aid in digestion, and the ingredients we use have several antioxidants. Fiji is home to the plant known as kava. It has a long history of being a ceremonial beverage that encourages calm. Kavalactones, which are found in kava, are thought to have a number of health advantages. Kavalactones may lessen anxiety, shield neurons from harm, lessen pain and lower the risk of cancer. In Fiji, kava is a well-known and beloved herbal remedy (WebMD, 2016).

What is kava kava? (2016, December 11).

Country focus: Sri Lanka
Refugees from Sri Lanka have been seeking refuge in Australia. Since the end of the civil war in 2009, more Sri Lankans have applied for refuge in Australia (Sri Lankans Refugee in Australia - Bing, n.d.). The three common health concerns Sri Lankans face are Malaria, mental health, and vitamin D deficiency (Australian Refugee Health » Primary Care for People of Refugee Backgrounds, n.d.).

Malaria
Malaria, a parasitic protozoal infection spread by mosquitoes and caused by the species Plasmodium, is one of the main health concerns experienced by Sri Lankans when they arrive in Australia. Regardless of any pre-departure malaria testing or treatment, tests should be conducted on anyone who has traveled from or through an endemic malaria area within 3 months of arrival if asymptomatic or within 12 months if experiencing feverish symptoms. (Australian Refugee Health » Primary Care for People of Refugee Backgrounds, n.d.)

Mental health
The discrimination associated with mental illness and seeking assistance is influenced by gender, family background, and country of birth. If these issues are addressed directly, public health initiatives to encourage awareness of mental health issues and seeking mental healthcare are more likely to be successful. Treatments include to kill the parasite; prescription medications are used to treat malaria. Treatment for mental health would be therapy (Mental Health Issues Sri Lankans Face When Arriving to Australia - Bing, n.d.).

Vitamin D deficiency
One of the main causes of this insufficiency is inadequate exposure to sunlight. Two Sri Lankan girls were actually only permitted to play outside for 30 minutes each day during their first several months of detention in Melbourne, which resulted in a vitamin D shortage that triggered illnesses and other issues (Mao, 2021) . Treatment would be to take vitamin D pills and increase intake of foods rich in vitamin D and receive more sunlight (Professional, n.d.).

sri lankans refugee in australia - Bing.

when I was reading Domain 7: Professional Practice from the ‘Culturally Responsive Clinical Practice: Working with People from Migrant and Refugee Backgrounds competency
Standards framework for clinicians. The section 12.1 that made me feel connected with was, how important it is to respect how culture affects how people from immigrant and refugee backgrounds make healthcare decisions and choices, to be conscious of one's own cultural values and beliefs, and to consider one's own cultural background and how that shapes interactions (Culturally Responsive Clinical Practice: Working With People From Migrant and Refugee Backgrounds COMPETENCY STANDARDS FRAMEWORK FOR CLINICIAN, 2019) . I now have a better knowledge of Clinicians should be able to employ self-reflection to assess their capability to offer adaptable and responsive treatment to patients from varied cultural backgrounds and to communicate with them in a way that is appropriate to that person and their needs. I now feel confident taking steps to influence how nurses engage with patients in healthcare settings of different backgrounds, belifes and values.

Culturally Responsive Clinical Practice: Working with People from Migrant and Refugee Backgrounds COMPETENCY STANDARDS FRAMEWORK FOR CLINICIANS JANUARY 2019.

The impacts of social determinants that have affected refugees in Australia are social inclusion and non-discrimination, income and social protection, and working life conditions (WHO, 2019). The inclusion of refugees in society has a correlation in Australia. Being a refugee, it may be challenging to feel socially accepted because you are from a different nation. Therefore, it might be challenging to adjust to feeling included and having other people accept you. Discrimination against refugees impacts mental health, and discrimination against refugees in Australia is prevalent. Income and social protection can impact refugees as earning income is a challenge when being in a new country, although it is assisted. Social protection in Australia is not always allocated through the government, and feeling safe in Australia is not always prevalent. Working conditions as a refugee in Australia is difficult as adjusting to a new country is difficult, adjusting to work life and being able to manage a job is not flexible.

World Health Organization: WHO.
