This knowledge spread in the following centuries thanks to the established monasteries at that time that were often the centers of the villages and had their own pubs.
- After the migration to the Americas , Whiskey is also tried to produce from grain. Because plants barley ( Hordeum ) difficult to grow here so farmers in North America began to ferment grains grow well there is rye ( Secale ) and wheat ( Triticum ). The oldest wineries appear in Maryland , Pennsylvania and Virginia . Because we can't find peatTherefore, it is impossible to apply the traditional whiskey production formula and therefore the wine produced is not good. Through the charring of the wine tanks, people try to bring a familiar smoke flavor into the distillation. It was not until the late 18th century that there were furnaces specializing in making whiskey.
3. Common types of whiskey :
- There are four main whisky producers around the world :
+ Scotch ( Tô cách Lan ) -> scotch whisky.
+ Ireland ( Ái nhĩ Lan ) -> Irish whisky.
+ America (Mỹ hoa Kỳ) -> American whiskey.
+ Canada ( Gia nã Đại ) -> Canadian whisky .
- Whisky was made through the distillation of fermented grains: barley, wheat, and corn.
- Japan is also a main whisky producer in the world.
* Scotch whisky :
- There are three main types of Scotch whisky:
+ Single Malt Whiskey: It is called single barley whiskey, also known as single malt. There is also a legal storage period of 2 years in new barrels made of white oak, burned to charcoal inside.
+ Tennessee Whiskey from Tennessee is sourced at least 51% from corn and at least 20% from rye, wheat or barley. Before being put into the storage barrel of Tennessee Whiskey is filtered through wood charcoal, making this Whiskey very mellow. This method is called the charcoal mellowing , leaching or more precisely the Lincoln County Process . This wood charcoal is produced from the maple tree ( Acer ).
- Commercial name: Jim Beam; Wild Turkey; Jack Daniel and Maker’s Mark.
Canadian whisky:
- Made primarily from rye or combined with other grains.
- Most Canadian whiskeys are multi-grain blends containing a large percentage of bourbon, and are generally lighter and smoother than other whiskeys.
- Commercial name: Canadian Club; Crow Royal and Seagram.
Irish whiskey :
- Made from barley or other grains.
- Commercial name: John Jameson; Old Bushmill’s.
* Opening way:
- Use hand slightly twist in a clockwise.
- If If the lid resembles a Cognac, it will open like a Cognac.
* Service way:
- Pure drink.
- Drink with ice.
- Drink with soft drink.
- Drink with cocktail.
* Enjoy Whiskey
Can be reached by dilution with water. The majority of Whiskeys on the market with 40 or 43 percent by volume have been previously diluted with water to a potable strength. It is recommended to further reduce the alcohol concentration in the glass to about 35%, which in particular continues to release more fragrance. Whiskey that is swung into a bottle with a barrel strength (within 60 percent by volume) is often too strong to drink without adding water. By adding water the strength of the wine is reduced and the aromatic substances of Whiskey are released. Even Scots and Irish people often drink their Whiskey at a dilution ratio of about 1: 1, serving Whiskey with a glass / bottle of water is mandatory there.
In addition, Whiskey is also often served with more ice ( Whiskey on the rocks ). This normally reduces the aroma because a large part of the aroma substances ( medium alcohol , esters , phenol ) is deposited by cold temperatures, and the whiskey becomes cloudy.
- Types of glasses used to drink whiskey: rock , tumber, lowball , ..
- The dish comes with whiskey :
To fully enjoy the taste of Whiskey, you should choose a dish with a gentle aroma and taste so as not to overwhelm the taste of the wine. So Seafood and Whiskey is a perfect combination.
For example : smoked salmon , dried fruits and nuts , steak , apple cake , ground meat , cheese and chocolate, ...

This classification gives the user information about the real estate sector. export and terroir of the region. Or about the vineyard, as well as the separate two-stage distillation method.

Cognacs must be made with 90 percent Ugni Blanc grapes, Folle Blanche and / or Colombard grapes. In addition, about 10% of other varieties are also used. Wines made from these grapes are high in acid and low in alcohol. That helps give Cognac the most appealing flavor.

Cognac is often considered a premium brandy, and the price for this brandy is quite expensive. However, there are still quite reasonable prices suitable for many customers. Often brandy will be used directly unmixed. But it can also be used as a base wine creating some very impressive cocktails.

2. Armagnac

Armagnac is another French brandy that is also protected by the AOC. It was produced in the Armagnac region of Gascony in the southwestern part of France. Just like Cognac. There are also a few varieties of grapes and production methods specified for this style of spirits.

3. American brandy
Some brands are made in the United States and other countries around the world.
They are simply called "brandy" because they do not have the same
complex categories as French brands.

Traditionally, most American brandies are produced
in the West Bank. Wine is made from grapes imported from reputable wineries.
However, this is changing as more craft distilleries begin to produce some of
the spirits themselves. Usually from grapes grown in their own locality. Like
the local wineries that have expanded over the decades, so does the
American-made Brandy.

4. Smell brandy As
mentioned, brandy can be made from any fermented juice. Each of these
"smelly brandy" has its own unique flavor. Liqueurs are mostly used
to prepare cocktails. Apple, apricot, cherry and peach brandy are the most
popular for blending many classic cocktails.

5. Grappa Grappa
literally means "stem of the vine." It is native to Italy as a way to get the most out of the pulp used in wine production.

It is created by fermentation and distillation of leftover grape skins, stems and seeds. And usually Grappa will not have to undergo oak aging. Grappa is usually clear in color, but some distillers will brew it. This will give it a yellow or reddish hue (depending on the type of barrel used).

Red wine & White wine....

1.Red wine & White wine
Wine is an alcoholic beverage produced by the fermentation of grapes, allowing the sugar in the grapes to be converted to alcohol. Thus, wine contains 100% pure grape juice, and does not have any other flavoring ingredients such as sugars, acids, enzymes or other nutrients.
Today, wine is one of the most popular alcoholic drinks in most restaurants and hotels around the world because of its benefits. Along with the growing popularity, some wines are now also made from a number of fruits, herbs or flowers. However, some countries only accept the name "wine" for an alcoholic beverage fermented from grapes.
2. 5 basic facts to know about it:

How many grapes is a bottle of wine made of? It sounds impossible, but you absolutely can accurately statistic the specific number of grapes to produce a perfect bottle of wine. Accordingly, we need about 600-800 grapes (equivalent to about 11 bunches with each grape weighing about 2g, on average a bunch of grapes has from 50-80 fruits) to make a 750ml bottle of wine. Thus, each 1 ton of grapes will produce 2 60 gallon wine barrels (about 3.7l), equivalent to about 720 bottles of wine 750ml type.

How many wines are there?
There are currently 5 types of wine popular and used in serving diners, including: red wine, white wine, pink wine, sparkling wine and sweet wine. In addition, some sources also point out another type of wine is tonic.
In addition, wine is classified according to the history, tradition and method of wine production of countries, including: old world - old world (including wine-growing and wine-producing countries. Europe such as France, Italy, Spain, Germany, Austria, Hungary, ..) and the new world - new world (including all non-European wine-growing and wine-producing countries like Chile , Argentina, USA, Australia, New Zealand, South Africa, ..)

Wine stoppers
There are two types of buttons used by manufacturers to preserve wine, they are: wick cork (cork, made from oak) and knob (swirl, made of light metal). There is a lot of controversy around which type of cork will be more effective, while the traditional natural cork in addition to the use of moisturizing the wine, creates elegance and contains "culture. wine chemistry ", each time the button is opened, it is still possible to" destroy "the characteristic taste of wine due to damage or heavy odor; while the vortex is convenient, low production cost, quick and easy to open-close, contribute to environmental protection.

Wine grapes
There are two varieties of grapes used to make wine, which are red grapes and white grapes.
Red grapes (red varieties) used to make red wine or white wine, including popular grapes such as: carbernet franc, cabernet sauvignon, merlot, syrah / shiraz, pinot noir, malbec, carmenere, ...
White varieties (white varieties) are used to make white wine, including popular varieties like: chardonnay, sauvignon blanc, riesling, gewurztraminer, chenin blanc, viognier, semillon, pinot grigio,

Distinguish red wine from white wine
Even in the name can distinguish these two wines because the color of the wine is different, red wine is dark red, while white wine is light yellow or straw yellow. In addition, red wine and white wine are distinguished by ingredients. Specifically: red wine is produced by the fermentation of the whole grapes, that is, the gut and the skin of the grapes; while white wine is produced by the fermentation of the intestines of the grapes alone, ie excluding the skin of the grapes, the juice from the intestines is colorless. ...

Cognac

1. What is Cognac?
First, it must be affirmed that: Cognac is not wine but spirits. All Cognacs are spirits, but all spirits are not Cognacs. A bottle of spirits is only called Cognac if it is made from white wine and contains at least 90% Ugni Blanc grapes, Folle Blanche and Colombard, grown in the Cognac region of southwestern France, twice distilled and produced. Aged for at least 2 years in Limousin or Troncais aromatic oak barrels. And the last thing is that the alcohol content in Cognac must reach at least 40%.
The French government has clearly specified that spirits made from the Cognac region of France according to this regional method of brewing should be labeled Cognac to avoid cases of "abuse" of the name of this wine.

2. Classification of Cognac alcohol by rank:
On the label of a Cognac bottle you can get information about when the wine is ripe. Normally, Cognac is aged for a long time to reveal all its special characteristics. Examples include V.S (very special), V.S.O.P (very superior old pale) and X.O (Extra old).

V.S-series bottles with 3 stars, they are aged for at least 2 years. Famous brands such as Rémy Martin or Martell, Cognac are usually aged for 4 to 6 years.

V.S.O.P bottles are aged for at least 4 years, usually 6 to 12 years. An unexpected thing is that during the resting period, this wine not only does not darken but also brightens, and the flavor is more and more full.

For the premium X.O-series bottles, they are usually aged for at least 6 years, sometimes up to 20 years. The price of the X.O bottle also follows that it is quite expensive compared to other bottles, usually 4 times the V.S bottle and 3 times the V.S.O.P.

There is also a premium type (Super-Catégorie) made from a rare hundred-year-old aeu-de-vie box that is often extremely expensive and rare, costing $ 10,000 a bottle.

3. The famous vineyard of Cognac
One of the factors that make up the quality of Coganac alcohol is the climate factor. The Cognac region is divided into 6 main areas with relatively different weather and climatic conditions.

Grande Chamapagne

Petite Champagne

Borderies

Fins Bois

Bon Bois

Bois Cordinaires

Because the soil conditions are mainly clay, limestone, sandy soil combined with the climate near the Atlantic coast, the grapes grown in these areas all have distinctive features, specific to Cognac. The changing weather also affects the grapes making Cognac. For example, global warming causes the sugar content of grapes to rise, leading to an increase in alcohol content in the wine.
4. Famous Cognac wineries
Among the hundreds of Cognac wineries, there are 4 famous winemakers accounting for 65% of the market in Cognac such as:
Martell: A long-standing wine company in Cognac since 1715 with a wide range of products from luxury to low-end, and is well received by many consumers.
Remy-Martin: Its products have a delicate, delicate taste because they only use grapes in limestone regions like Grand Champagne and Petite Champagne to make wine. Its finest wines are often labeled "Fine Champagne".
Courvoisier: This is a winery founded by the French, but due to no descendants, it was acquired by the British. Its wine was later called "Cognac of Napoléon" and had a Napoleon image on the label.
Hennessy: This is the largest company in the Cognac region with an even larger output than the combined output of all three firms. Its Cognac products are distributed around the world markets with diverse designs and different prices. It is said that, when Thomas Jefferson signed the Declaration of Independence, the Hennessy Cognac was the bottle he opened to celebrate.

- Origin: As its name implies, the Tequila region, the state of Jalisco, is on the western plateau of Mexico
- Prepared from: Agave Azul , a plant native to Mexico
- Strong flavor, a premium Whiskey, has a crisp, spicy taste
- High concentration, usually Tequila will have an alcohol content of 38-40%, but in particular there is an alcohol content of up to 43 - 46%.
- Tequila wines:
Basically, there are two types of Tequila: the blended and the 100 percent aromatic Agave.
Mix Type:
Blended Tequila with an Agave water content of not less than 51%. And sugar alcohol makes up the rest. Tequila Mixtos alcohol uses both Glucose and Frutose.
Aromatic Agave:
Wines made of 100% Agave Frucose, Blanco or Plata are heavier and have a stronger taste of distilled Agave, while Reposado and Anejo are more compact and softer. Like the wine brewed in a wooden barrel, Frucose has a woody aroma, while the darkness of the liqueur is softened. The main difference in the taste of Agave Tequila 100% is the difference in alcohol content. So this has a more herb flavor than the grain-based one.
- How to use:
1 / Mixing cocktails (using highball): One of the most attractive and popular cocktails is Tequila Sunrise cocktail
2 / Drink directly with lemon - salt: This drink is very popular outside of Mexico, it is called "tequila cruda" or it is called in order: lick - sip - suck (lick salt, drink tequila, sucking lemon slices). It is done in detail as follows: lick the saliva and the hand skin between the thumb and forefinger, then sprinkle salt on the skin, hold the lime with the index finger and thumb, exhale, lick the spot Salt in hand, finished shot of tequila and sucked the lemon.
3 / Drink without lemon - salt: In the traditional Mexican way, tequila is drunk directly without adding lemon and salt. When drinking tequila is poured into a narrow glass shot like the type in the bar. It is not advisable to refrigerate alcohol while drinking as the low temperature will significantly impair its flavor. However, some types of tequila have a recommendation on the label that they should be chilled before drinking. However, those are just low quality tequila.
3 / There are several types of strong bottled tequila :
- Resposado is aged for at least 2 months, but less than 1 year in full-sized oak barrels.
- Anejo is aged for at least 1 year, but less than 3 years in small oak barrels.
Extra Anejo is aged for at least 3 years in oak barrels. This type was released at the latest in March 2006.
Often used with several dishes such as:
- Fried chicken: Match a cup of Casa Nobel Crystal. This is a wine with characteristic of Tequila Blanco with a spicy, sweet taste
- Pizza: suitable for Single-barrel Reposado with cream flavor. The minerals in wine will help lightly burnt pizza, especially stimulating the taste buds. In addition, due to the composition of chestnuts and fruits, Reposado can be enjoyed with many types of cheese at the same time.
- Ice cream: A Bartender was inspired by the chocolate ice cream popsicle he ate in Athens, Greece. The ingredients in Casa Noble Anejo wine contain a lot of dark chocolate, orange peel essence, flavored with perennial French oak and especially green apple and pear flavor. Even though it contains a lot of chocolate, the fruity flavor stands out in this wine. Therefore, the available sweetness from agave sugar in the wine combines the apple and pear flavor to create a great contrast when used with a black chocolate ice cream.

Hopefully, with the recent information, it will help Mr. Huy and my friends answer questions around this special wine.
