Mountains can be used as evidence of plate tectonics because of their age. For example, the Scandes Mountains, Greenland Mountains, and Appalachians were formed approximately during the same time. We think that at one point it was ll together and drifted over time. South America and Africa go together because of common sense. Without plate tectonics Pangaea would never had drifted apart.

Fossils can be used as evidence because different species crossed the continents when they were conjoined. They wouldn't be able to cross oceans or travel long distances any other way, for example, lystrosaurus fossils have been found in both Africa and Antarctica. This species wouldn't be able to survive in such cold climates and couldn't swim the length of the arctic ocean if the two continents weren't joined together.
